Tips for success
For the most flavorful sauce, use a good-quality broth — homemade or store-bought low-sodium. The broth seasons the pork and forms the base of the sauce, so it's worth using one you like.
If you prefer a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir it into the slow cooker during the last 30 minutes of cooking. This will give the sauce a glossy, gravy-like consistency.
Don't be tempted to stir the ingredients right after adding them. Leaving the cream cheese and Parmesan on top allows them to melt gradually and create a smooth sauce without curdling.
If you do stir too early, the cheese may clump, but it will still taste good. For an extra layer of flavor, you can sear the pork chops in a skillet before adding them to the slow cooker, but it's not necessary.
Variations
- Chicken French Onion: Substitute boneless, skinless chicken breasts or thighs for the pork. Cook on LOW for 4 to 5 hours, until the chicken reaches 165°F (74°C). The sauce and onions work beautifully with poultry.
- Mushroom Swiss: Add 8 oz sliced mushrooms with the onions, and swap the Parmesan for 1/2 cup shredded Swiss cheese. The mushrooms add an earthy depth that complements the creamy sauce.
- Herb Variation: Replace fresh thyme with 2 sprigs of fresh rosemary or 1 teaspoon dried oregano. The herbaceous notes will shift the flavor profile while keeping the dish comforting and aromatic.
- Spicy Kick: Add 1/4 teaspoon red pepper flakes or a dash of hot sauce to the broth for a subtle heat that cuts through the richness of the cheese sauce.

Store leftover pork chops and sauce in an airtight container in the refrigerator for up to 3 days. The flavors will continue to meld, making it even more delicious the next day. Reheat gently in the microwave or on the stovetop, adding a splash of broth or water if the sauce has thickened too much.
This recipe is ideal for meal prep. Assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker base and cook as directed. You can also freeze the cooked dish for up to 3 months — thaw overnight in the refrigerator before reheating.
Serving ideas
Serve the pork chops and sauce over fluffy white rice, mashed potatoes, or buttered egg noodles. The creamy sauce is also wonderful spooned over crusty bread or a baked potato. For a low-fuss meal, pair with a simple green salad or steamed green beans to add freshness and color to the plate.
Garnish with fresh thyme leaves or a sprinkle of extra Parmesan just before serving to enhance the visual appeal and flavor. This dish is hearty enough to stand alone, but it also pairs well with roasted vegetables or a side of sautéed mushrooms.
Leftovers make a fantastic sandwich filling — just pile the pork and onions onto a toasted roll and drizzle with extra sauce.

Crockpot Parmesan French Onion Pork Chops

Ingredients
- 4 boneless center-cut pork loin chops (about 1 1/2 lb total)
- 2 large sweet Vidalia onions, thinly sliced
- 6 sprigs fresh thyme
- 1 cup beef or chicken broth
- 8 oz block cream cheese, softened
- 1/2 cup freshly grated Parmesan cheese
Instructions
- Place the pork chops in a single layer in the bottom of a 6-quart slow cooker. Scatter the sliced onions over the top, then add the fresh thyme sprigs. Pour the broth around the edges, being careful not to rinse the seasonings off the meat.
- Place the block of cream cheese in the center of the slow cooker on top of the onions. Sprinkle the grated Parmesan evenly over everything. Do not stir — the cheese will melt and create the sauce as it cooks.
- Cover the slow cooker and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the pork is fork-tender and reaches an internal temperature of at least 145°F (63°C). Avoid lifting the lid during cooking to keep the heat steady. Let it rest for 3 minutes before slicing.
- When the pork is cooked through, turn off the slow cooker and let the meat rest in the sauce for at least 3 minutes. This allows the juices to redistribute, keeping the chops moist and tender.
- Gently stir the sauce in the slow cooker to combine the melted cream cheese and Parmesan into a smooth, velvety sauce. The onions will have softened into sweet, jammy ribbons. Remove the thyme sprigs (the leaves will have fallen off) before serving.
- Spoon the pork chops and sauce over fluffy rice, mashed potatoes, or egg noodles. Garnish with fresh thyme leaves if desired. Serve hot, with extra Parmesan on the side.
