Tips for success
For the best flavor, use freshly grated Parmigiano-Reggiano – it melts smoothly and adds a nutty, salty depth that pre-shredded cheese can't match. If you have time, sear the chicken thighs in a hot skillet for 2-3 minutes per side before adding them to the slow cooker.
This adds a golden crust and extra savory notes, though it's not required. The recipe is forgiving, so feel free to add a pinch of black pepper or a splash of lemon juice at the end to brighten the sauce.
To keep the asparagus from overcooking, choose thicker spears and trim them to even lengths. If you prefer a thicker sauce, remove the lid for the last 30 minutes of cooking to let some moisture evaporate.
For a lighter version, use reduced-fat cream cheese and low-fat soup – the texture will be slightly less rich but still delicious. Serve this dish over egg noodles, rice, or creamy mashed potatoes to soak up every bit of the velvety sauce.
Variations
- Mushroom and Thyme: Replace the asparagus with 8 oz sliced mushrooms and add 1 teaspoon dried thyme with the soup. The mushrooms will release moisture and add an earthy flavor that pairs beautifully with the creamy sauce.
- Spicy Southwest: Add 1 diced jalapeño and 1 teaspoon ground cumin to the soup layer. Swap the egg noodles for warm corn tortillas or rice. Top with fresh cilantro and a squeeze of lime before serving.
- Broccoli Cheddar: Use broccoli florets instead of asparagus and substitute condensed cheddar cheese soup for the cream of celery. Add 1 cup shredded sharp cheddar in the last 30 minutes and stir until melted.
- Lemon Herb: Stir the zest of 1 lemon and 2 tablespoons chopped fresh parsley into the sauce after cooking. Serve over angel hair pasta or orzo for a brighter, herbaceous version.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently with a splash of broth or milk to loosen the sauce.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over low heat, stirring occasionally, or in the microwave in 30-second bursts.
Refrigerate leftovers in an airtight container for up to 4 days. The sauce will thicken as it cools; add a splash of milk or chicken broth when reheating to restore its creamy texture. Reheat gently in the microwave or on the stovetop over low heat, stirring occasionally, until warmed through. Do not leave the dish at room temperature for more than 2 hours.
This recipe can be assembled up to 24 hours in advance. Layer the raw chicken, asparagus, soup, and cheeses in the slow cooker insert, cover, and refrigerate.
When ready to cook, place the insert in the slow cooker and cook on low for 4-5 hours, adding about 30 minutes to the cooking time because the ingredients start cold. Alternatively, cook the dish fully, cool, and refrigerate for up to 4 days; reheat gently before serving.
Serving ideas
Serve this creamy chicken and asparagus over warm buttered egg noodles – the classic pairing – but it's equally delicious over rice, mashed potatoes, or even crusty bread to soak up the sauce.
Garnish with extra grated Parmesan and a crack of black pepper if desired. A simple green salad with a tangy vinaigrette balances the richness, and a glass of crisp white wine, like Sauvignon Blanc, would be a lovely accompaniment.
For a complete meal, add a side of roasted vegetables or a simple steamed green vegetable. The dish is hearty enough to stand alone, but the sauce begs for something to soak it up. If you have leftovers, they make a fantastic filling for stuffed baked potatoes or a topping for toast. Warm the leftovers gently and spoon over a baked potato for an easy lunch the next day.

Creamy Parmesan Asparagus Chicken Thighs – Easy Slow Cooker Dinner

Ingredients
- 2 lb boneless skinless chicken thighs
- 1 lb fresh asparagus spears, trimmed
- 1 can (10.5 oz) condensed cream of celery soup
- 8 oz cream cheese, softened
- 1/2 cup freshly grated Parmigiano-Reggiano
- warm buttered egg noodles, for serving
Instructions
- Place the chicken thighs in an even layer across the bottom of a 7-quart slow cooker. Scatter the trimmed asparagus spears over the chicken, spreading them out so they are mostly covered by the meat or tucked around it.
- Spoon the condensed cream of celery soup over the chicken and asparagus. Use the back of the spoon to spread it into an even layer, but do not stir – the soup will melt and create the sauce as it cooks.
- Place the softened cream cheese in a few dollops over the soup. Sprinkle the grated Parmigiano-Reggiano over the top, covering as much surface as possible. Do not stir.
- Cover the slow cooker with the lid. Cook on low for 4 to 5 hours, until the chicken is fork-tender and reaches an internal temperature of 165°F (74°C). Do not lift the lid during the first 3 hours.
- After 4 to 5 hours, stir the mixture gently with a spoon to combine the melted cream cheese and Parmesan into a smooth, velvety sauce. The chicken should be pull-apart tender. Taste and adjust seasoning if desired.
- Spoon the creamy chicken and asparagus mixture over warm buttered egg noodles. Serve immediately, spooning extra sauce from the slow cooker over each portion.
