Tips for success
For the best flavor, use a good-quality beef bone broth gravy. If you're short on time, a canned gravy works, but look for one with a rich, dark color. The onion soup mix is salty, so taste before adding extra salt.
If you prefer a thicker gravy, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the slow cooker during the last 30 minutes of cooking.
This roast is incredibly versatile. Serve it on slider buns for a fun dinner, or pile it over egg noodles, mashed potatoes, or polenta.
The leftovers make incredible sandwiches the next day—just pile the beef onto a crusty roll with a little cheese and broil until melted. You can also use the shredded beef in tacos or quesadillas for a quick weeknight meal.
Variations
- Add Carrots and Potatoes: Toss 3 large carrots, cut into chunks, and 1 pound of baby potatoes into the slow cooker with the mushrooms. They'll cook in the gravy and become tender, making it a complete one-pot meal.
- Use Pork Shoulder: Swap the beef chuck roast for a 3 1/2-pound pork shoulder. Cook on low for 8-9 hours until pull-apart tender. The onion soup mix and gravy work beautifully with pork, too.
- Make It Spicy: Add 2 chopped jalapeños or a teaspoon of red pepper flakes along with the onion soup mix for a spicy kick. You can also use a spicy brown gravy or add hot sauce before serving.
- Herb-Infused Gravy: Stir in 2 sprigs of fresh thyme and 1 bay leaf with the gravy. Remove them before shredding. The herbs add an earthy note that complements the mushrooms beautifully.

Store leftover shredded beef and gravy in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if the gravy has thickened too much. The flavors continue to meld, so leftovers often taste even better the next day.
This recipe is perfect for meal prep. Cook the roast as directed, then shred and store in the refrigerator for up to 4 days. You can also freeze it for up to 3 months.
To freeze, let the beef cool completely, then transfer to a freezer-safe container or bag. Thaw overnight in the refrigerator before reheating.
Serving ideas
Serve the shredded beef on toasted brioche slider buns for a fun, casual dinner. Pile the meat high, spoon over extra gravy, and let everyone build their own.
Add a side of pickles or a simple green salad to balance the richness. The buns soak up the gravy beautifully, making each bite messy and delicious.
For a more traditional presentation, serve the roast over mashed potatoes or egg noodles. The gravy acts as a sauce, coating the potatoes or noodles perfectly. Garnish with fresh parsley if you like, though it's not necessary. This is comfort food at its finest—hearty, savory, and satisfying.

Slow-Cooker Mushroom Gravy Chuck Roast

Ingredients
- 3 1/2 lb beef chuck roast
- 1 oz dry onion soup mix
- 8 oz cremini mushrooms, halved
- 2 cups beef bone broth gravy
- 3 tbsp unsalted butter, cut into pats
- 8 brioche slider buns, toasted
Instructions
- Place the beef chuck roast in the center of the slow cooker insert. Sprinkle the dry onion soup mix evenly over the top. Scatter the halved cremini mushrooms around the sides of the roast.
- Pour the beef bone broth gravy over the roast and mushrooms. Dot the top of the roast with the pats of unsalted butter.
- Cover the slow cooker and cook on low for 8 hours, or on high for 4-5 hours, until the roast is fork-tender and easily shreds. Let it rest for 3 minutes before slicing.
- Once the roast is fork-tender, transfer it to a cutting board. Use two forks to shred the beef into large chunks, discarding any large pieces of fat. Return the shredded beef to the slow cooker and stir gently into the gravy.
- Toast the brioche slider buns. Pile the shredded beef and mushrooms onto the buns and spoon extra gravy over the top. Serve immediately.
