Tips for success
For the best flavor, brown the sausage until deeply golden. That caramelization adds a savory depth that you can't get from just simmering. Also, don't skip the step of cubing the cream cheese; it melts faster and more evenly, preventing lumps.
If you're short on time, you can use pre-sliced mushrooms and pre-shredded mozzarella, but shredding your own cheese from a block melts smoother.
To make this even easier, assemble the entire dish the night before—minus the mozzarella—and store it in the refrigerator. In the morning, top with mozzarella and cook.
If you want a bit of texture, sprinkle some toasted breadcrumbs or extra Parmesan over the top just before serving. And remember, leftovers are delicious; just reheat gently to keep the sauce creamy.
Variations
- Spicy Sausage Version: Use hot Italian sausage instead of sweet, and add a pinch of red pepper flakes with the Alfredo sauce. The heat cuts through the creamy sauce and adds a nice kick.
- Add Veggies: Stir in a cup of chopped spinach or kale during the last 30 minutes of cooking. You can also add sautéed bell peppers or zucchini along with the mushrooms for extra color and nutrition.
- Chicken Alfredo Tortellini: Substitute the sausage with diced cooked chicken breast. Add the chicken in layers with the tortellini, and reduce the cook time to 2-3 hours since the chicken is already cooked.
- Extra Cheesy: Mix in 1/2 cup of grated Parmesan cheese with the Alfredo sauce, and top with an extra 1/2 cup of mozzarella. This makes the dish even richer and more decadent.
Storage and make-ahead
- Fridge
- Keep leftovers in an airtight container in the refrigerator for up to 3 days. The sauce may thicken; add a splash of milk or broth when reheating.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or microwave.
- Reheat
- Reheat individual portions in the microwave for 1-2 minutes, stirring halfway.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The sauce will thicken as it cools; stir in a little milk or chicken broth when reheating to restore the creamy texture.
Reheat in the microwave in 30-second bursts, stirring between, or in a saucepan over low heat until warmed through.
You can assemble the slow cooker insert up to 24 hours in advance. Brown the sausage, layer all ingredients except the mozzarella, cover, and refrigerate. When ready to cook, top with mozzarella and add 30 minutes to the cooking time since the pot starts cold. This makes it a great option for busy mornings.
Serving ideas
Serve this tortellini as a hearty main dish with a crisp green salad dressed in a simple vinaigrette and some crusty garlic bread for sopping up the sauce. It's also wonderful alongside roasted broccoli or sautéed greens. The creamy, cheesy flavors pair well with a light, acidic side to balance the richness.
For a family-style presentation, bring the slow cooker to the table and let everyone serve themselves. Garnish with fresh basil or parsley and a sprinkle of red pepper flakes for a little heat.
This dish is satisfying on its own, but you can also serve it as a side dish with grilled chicken or steak for a larger gathering.

Crockpot Mozzarella Sausage Spinach Tortellini

Ingredients
- 1 lb sweet Italian pork sausage, casings removed
- 20 oz refrigerated spinach-and-cheese tortellini
- 8 oz cremini mushrooms, sliced
- 15 oz Alfredo sauce
- 8 oz cream cheese, softened and cut into cubes
- 2 cups shredded whole-milk mozzarella cheese
Instructions
- Heat a large skillet over medium-high heat. Add the sausage and cook, breaking it into crumbles with a wooden spoon, until browned and no longer pink, about 5 to 7 minutes. Drain excess fat if desired. Transfer the sausage to the bottom of the slow cooker.
- Spread the tortellini evenly over the sausage in the slow cooker. Scatter the sliced mushrooms on top.
- Pour the Alfredo sauce over the tortellini and mushrooms, using a spatula to spread it evenly and coat the ingredients.
- Place the cubed cream cheese on top of the sauce. Do not stir; just press it gently into the sauce.
- Sprinkle the shredded mozzarella evenly over the cream cheese and all the ingredients in the slow cooker.
- Cover the slow cooker and cook on LOW for 3 hours, or until the tortellini are tender and the sauce is bubbly. Avoid opening the lid during cooking to keep the heat steady.
- After cooking, stir the mixture gently to combine the melted cream cheese and mozzarella into the sauce. The sauce will look creamy and slightly thick.
- Spoon the tortellini onto plates or into bowls. Serve immediately, with extra mozzarella or Parmesan on the side if desired.
