Tips for success
For the best texture, cook the pasta on low rather than high. Low heat gives the pasta time to absorb the sauce without turning mushy.
If you're short on time, you can cook on high for 2-3 hours, but the pasta may be softer. Also, don't over-stir during cooking—let the layers do their thing.
If you like a little heat, use hot Italian sausage or add a pinch of red pepper flakes. For extra veggies, throw in some sliced mushrooms or bell peppers with the sausage.
And if you want a crisp, cheesy top, transfer the cooked pasta to a baking dish, sprinkle with extra mozzarella, and broil for 2-3 minutes until golden.
Variations
- Spicy Sausage: Use hot Italian sausage instead of sweet, and add 1/2 teaspoon of red pepper flakes with the sauce for a fiery kick. The heat cuts through the creamy cheese beautifully.
- Veggie Loaded: Add 8 oz of sliced mushrooms and 1 diced bell pepper to the slow cooker with the sausage. Sauté the vegetables with the sausage first for extra flavor.
- Cheesy Herb: Stir in 1 teaspoon of dried oregano and 1/2 teaspoon of dried thyme with the sauce. Top with fresh basil before serving for a fragrant, herby finish.
- Chicken Version: Swap the sausage for 1 lb of boneless, skinless chicken thighs, cut into chunks. Brown them first, then cook on low for 3 hours, or until the chicken is tender and reaches 165°F (74°C).
Storage and make-ahead
- Fridge
- Store in an airtight container in the fridge for up to 4 days. Reheat gently, adding a splash of milk or water to restore creaminess.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat in the microwave in 1-minute intervals, stirring between, or on the stovetop over medium-low heat with a splash of water or milk until hot.
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or on the stovetop with a splash of water or milk to loosen the sauce.
You can brown the sausage and assemble all the ingredients in the slow cooker insert the night before.
Cover and refrigerate, then in the morning place the insert in the slow cooker and cook as directed. You may need to add 30 minutes to the cooking time if starting from cold.
Serving ideas
Serve this rigatoni straight from the slow cooker for a casual family dinner, or plate it on a large platter with a sprinkle of fresh parsley and grated Parmesan. It pairs beautifully with a simple green salad and crusty bread to soak up the extra sauce.
For a more substantial meal, serve the pasta alongside garlic bread or a side of roasted vegetables. The creamy, cheesy sauce is rich, so a light side like a crisp salad balances it well.
It's also great for potlucks—just keep it warm in the slow cooker and let guests serve themselves.

Crockpot Mozzarella Sausage Rigatoni: Dump-and-Go Dinner

Ingredients
- 1 lb browned sweet Italian pork sausage crumbles
- 1 lb rigatoni pasta
- 1 jar (24 oz) roasted garlic tomato basil sauce
- 8 oz cream cheese, softened
- 2 cups shredded whole-milk mozzarella
Instructions
- Place the browned sweet Italian pork sausage crumbles in the bottom of a 6-quart slow cooker. Spread them into an even layer. Add the rigatoni pasta directly over the sausage, then pour the roasted garlic tomato basil sauce over the pasta, making sure the pasta is mostly covered by the sauce.
- Place the block of cream cheese in the center of the slow cooker on top of the sauce. Sprinkle the shredded mozzarella evenly over the entire surface, covering the cream cheese and the sauce.
- Cover the slow cooker and cook on low for 4 hours, or until the pasta is tender and the sauce is bubbling around the edges. Do not lift the lid during the first 3 hours to keep the heat steady.
- After 4 hours, stir the mixture well to combine the melted cream cheese and mozzarella into the sauce. Check that the sausage crumbles have reached an internal temperature of 160°F (71°C) to ensure they are fully cooked.
- Spoon the rigatoni and sausage onto plates or into bowls, making sure to get a good amount of sauce and cheese with each serving. Serve immediately while hot and bubbling.
