Before you start

Before starting, gather all your ingredients and equipment. You'll need a 7-quart slow cooker, a large spoon, and measuring cups. If using fresh meatballs, ensure they are at room temperature (but not out of the fridge for more than 30 minutes). Rinse the slow cooker insert if needed.

Have your vodka sauce, ravioli, cream cheese, and mozzarella ready. There's no need to pre-cook anything, but you can cut the cream cheese into chunks for faster melting. Set out your serving plates or bowls so you can serve immediately once the cooking time is up.

Ingredients at a glance (5)
  • 2 lb homestyle Italian beef meatballs
  • 20 oz jumbo four-cheese ravioli
  • 24 oz vodka sauce
  • 8 oz cream cheese
  • 2 cups shredded whole-milk mozzarella

Instructions

Layer and Load

  1. Layer the Meatballs
Place the beef meatballs in an even layer in the bottom of a 7-quart slow cooker. Spread them out so they cover the base without overlapping too much, ensuring even cooking.
Look for Meatballs should form a single layer, touching but not piled high.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip If using frozen meatballs, no need to thaw—just add a little extra cooking time.
  2. Add Ravioli and Sauce
Layer the jumbo four-cheese ravioli over the meatballs, spreading them out. Pour the vodka sauce evenly over the top, covering the ravioli and meatballs as much as possible.
Look for Ravioli should be mostly submerged in sauce; some edges may peek out.
Tip Use a spatula to gently press ravioli into the sauce if needed.
  3. Top with Cream Cheese and Mozzarella
Place the block of cream cheese in the center of the slow cooker. Sprinkle the shredded mozzarella evenly over the entire surface, covering the cream cheese and the rest of the dish.
Look for The top should be covered with a blanket of mozzarella, with the cream cheese block visible in the middle.
Tip For easier melting, cut the cream cheese into a few chunks before adding.

At the end of this phase, your slow cooker should be filled with layers of meatballs, ravioli, vodka sauce, cream cheese, and mozzarella. The top will look like a snowy landscape of cheese, with the cream cheese block nestled in the center. The aromas of garlic and tomato should already be enticing. Resist the urge to stir—everything will meld during cooking.

Slow Cook and Merge

  1. Cook on Low
Cover the slow cooker and cook on low for 4 to 5 hours, until the meatballs are cooked through and the ravioli are tender. Do not stir during the first 3 hours to allow the cheese to melt and the layers to meld.
Look for After 3 hours, the sauce should be bubbling gently and the cheese melted.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Resist the urge to lift the lid—each peek adds 15-20 minutes of cooking time.
  2. Stir Gently
After 3 hours, gently stir the mixture to incorporate the cream cheese into the sauce. Be careful not to break the ravioli. Continue cooking for the remaining 1 to 2 hours, uncovered if you prefer a thicker sauce.
Look for The sauce should look pink and creamy, with the cream cheese fully melted.
Tip Use a rubber spatula to fold the sauce without crushing the ravioli.
  3. Check Meatball Doneness
Check that the meatballs have reached an internal temperature of 160°F (71°C) using an instant-read thermometer. Insert the thermometer into the center of a meatball to ensure it is fully cooked.
Look for The thermometer should read at least 160°F (71°C) when inserted into the thickest part of a meatball.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip If not yet done, cover and cook for another 30 minutes, then check again.

After 3-4 hours, the sauce should be bubbling gently around the edges, and the cheese will have melted into a golden, bubbly layer. The cream cheese will have softened and started to blend into the sauce, creating a pink, creamy hue.

The meatballs should look plump and cooked through, and the ravioli will have puffed up slightly. Gently stirring now will incorporate the cream cheese fully.

Serve and Savor

  1. Serve Hot
Spoon the bubbling mixture onto plates or into bowls. Use a large spoon to get a good scoop of meatballs, ravioli, and sauce. Serve immediately while hot and cheesy.
Look for The cheese should stretch as you lift the spoon, and steam should rise from the dish.
Tip For a nice presentation, sprinkle a little extra mozzarella on top just before serving.

The final dish should be bubbling, with steam rising and cheese stretching as you spoon it out. The sauce should be thick and creamy, coating the ravioli and meatballs. The meatballs should be fork-tender, and the ravioli should be firm but tender. Serve immediately for the best texture and flavor.

Common mistakes

One common mistake is stirring too early, which can break the ravioli and create a mushy texture. Wait at least 3 hours before stirring gently. Another is using a slow cooker that's too small—ensure it's at least 6 quarts to fit all ingredients comfortably.

Overcooking can make the ravioli fall apart, so check for doneness at the minimum time. Finally, don't lift the lid repeatedly, as this releases heat and extends cooking time. Trust the process and resist the urge to peek.

How to tell it’s done

The dish is done when the meatballs are cooked through and reach an internal temperature of 160°F (71°C) on an instant-read thermometer. The ravioli should be tender but still hold their shape, and the sauce should be thick and creamy.

The top will be bubbly and the cheese fully melted. If you prefer a thicker sauce, cook uncovered for the last 30 minutes; if you like it saucier, keep the lid on. Taste and adjust seasoning with salt and pepper if needed.

  • Ground meat: 160°F (71°C) in the thickest part
