Before you start

Before starting, make sure the slow cooker is clean and dry. If using frozen meatballs, there's no need to thaw them.

Measure the marinara sauce and have the cream cheese and mozzarella ready. The tortellini should be fresh from the refrigerator. No other prep is needed—this is truly a dump-and-go meal.

Ingredients at a glance (5)
  • 2 lb homestyle Italian beef meatballs
  • 20 oz refrigerated three-cheese tortellini
  • 24 oz crushed San Marzano marinara sauce
  • 8 oz cream cheese
  • 2 cups shredded whole-milk mozzarella

Instructions

Layer and Go

  1. Layer the base
Place the beef meatballs in an even layer in the bottom of a 6-quart slow cooker. They should cover the bottom in a single layer for even cooking.
Look for The meatballs should be evenly spread and touching the bottom of the slow cooker.
Tip If using frozen meatballs, there is no need to thaw them first.
  2. Add tortellini and marinara
Scatter the refrigerated tortellini over the meatballs, then pour the marinara sauce over the top, making sure it covers the tortellini and meatballs completely.
Look for The sauce should submerge most of the tortellini and meatballs.
Tip Use a spatula to gently press the tortellini down into the sauce.
  3. Top with cream cheese and mozzarella
Place the block of cream cheese in the center of the slow cooker, then sprinkle the shredded mozzarella evenly over the entire surface.
Look for The cream cheese sits on top and the mozzarella covers the sauce.
Tip Let the cream cheese soften at room temperature for 15 minutes before adding to make it easier to spread later.

At the end of this phase, the slow cooker contains a neat stack of ingredients: meatballs on the bottom, tortellini on top, covered with marinara, and crowned with cream cheese and mozzarella.

The kitchen smells of tomato and herbs, and everything looks vibrant and fresh. There's no need to mix—just cover and cook.

Slow Simmer

  1. Cook on low
Cover the slow cooker and cook on low for 4 hours, or until the meatballs are cooked through and the tortellini are tender. Do not stir during cooking.
Look for The sauce should be bubbling gently around the edges and the cheese melted.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Resist the urge to lift the lid—every peek lets heat escape and adds cooking time.

After a few hours, the slow cooker is bubbling gently around the edges. The cheese has melted into a golden blanket, and the sauce is fragrant with garlic and basil. The meatballs are cooked through, and the tortellini are tender. The cream cheese has softened and is ready to be stirred in.

Stir and Serve

  1. Stir and serve
Once cooked, gently stir the mixture to combine the melted cream cheese into the sauce. Serve hot, spooning the cheesy pasta and meatballs onto plates.
Look for The sauce should be creamy and pinkish-orange from the melted cream cheese.
Tip For a thicker sauce, let the slow cooker sit on warm for 10 minutes after stirring.

Once stirred, the sauce turns a beautiful creamy orange, with ribbons of melted mozzarella and chunks of meatball. The tortellini are plump and coated in sauce. The dish is steaming hot and ready to be served. The aroma is rich and inviting, promising a comforting, satisfying meal.

Common mistakes

One common mistake is lifting the lid too often to check on the food. This lets heat escape and increases the cooking time. Another is using dried tortellini, which can become mushy or undercooked.

Stick with refrigerated tortellini. Also, don't stir the pot during cooking—stirring can break up the meatballs and make the tortellini stick together. Finally, be patient: the low heat is what makes the sauce so flavorful.

How to tell it’s done

The dish is done when the meatballs are cooked through (the internal temperature should reach 160°F / 71°C), the tortellini are tender but not mushy, and the sauce is bubbling and the cheese is melted.

The cream cheese should be fully melted and easily stirred into the sauce. If the sauce seems thin, let it cook on low for an additional 30 minutes uncovered to thicken.

  • Ground meat: 160°F (71°C) in the thickest part
