Before you start

Before starting, cut the chicken breast into bite-sized cubes and set aside. Measure the rigatoni and sauce. Soften the cream cheese by leaving it at room temperature for about 30 minutes, then cut into chunks.

Shred the mozzarella if not pre-shredded. Have a 6-quart slow cooker ready. No need to pre-cook the pasta — it will cook in the sauce. Set out a cutting board, knife, measuring cups, and a large spoon. The prep takes about 10 minutes.

Ingredients at a glance (5)
  • 2 lb boneless skinless chicken breast, cut into bite-sized cubes
  • 1 lb rigatoni pasta
  • 24 oz roasted garlic tomato basil sauce
  • 8 oz cream cheese, softened and cut into chunks
  • 2 cups shredded whole-milk mozzarella

Instructions

Layer and Cook

  1. Layer the Ingredients
Place the cubed chicken breast in an even layer in the bottom of a 6-quart slow cooker. Sprinkle the rigatoni over the chicken, then pour the roasted garlic tomato basil sauce over the pasta, making sure the sauce covers most of the surface. Add the cream cheese chunks on top, spreading them slightly, then scatter the shredded mozzarella over everything.
Look for The slow cooker should be about half full, with the chicken and pasta mostly submerged in sauce.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not stir before cooking — the layers will meld as the slow cooker works.
  2. Cover and Cook on Low
Cover the slow cooker with its lid and set it to cook on low for 4 hours. Do not open the lid during the first 3 hours to keep the heat and steam inside. After 3 hours, gently stir the mixture once to redistribute the sauce and cheese, then continue cooking for the remaining hour.
Look for The sauce should be bubbling gently around the edges and the cheese mostly melted.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the slow cooker runs hot, check at 3 1/2 hours to avoid overcooking the pasta.

At the end of this phase, the slow cooker should be filled with layered ingredients: chicken at the bottom, rigatoni in the middle, and the sauce, cream cheese, and mozzarella on top. The sauce should be barely bubbling around the edges, and the cheese will start to melt. The chicken should be mostly cooked through, though the center may still be pink. The mixture will look saucy but not watery.

Finish and Thicken

  1. Check Chicken Doneness
After 4 hours, check that the chicken is cooked through by inserting an instant-read thermometer into a few cubes; it should read at least 165°F (74°C). The chicken should be tender and easily pull apart with a fork. If the chicken needs more time, cover and cook for another 30 minutes, then recheck.
Look for The chicken is opaque, tender, and registers 165°F (74°C) on the thermometer.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the chicken is still pink in the center, return the lid and cook for 10–15 more minutes.
  2. Stir and Adjust Consistency
Stir the entire mixture well so the melted cream cheese and mozzarella are fully incorporated into the sauce. The sauce should be creamy and coat the pasta and chicken. If it looks too thick, add a splash of reserved pasta water or chicken broth to loosen it. If it seems too thin, let it cook uncovered for 10 minutes to reduce.
Look for The sauce is smooth, glossy, and clings to the pasta without being watery.
Tip Taste and season with salt and pepper if needed — the sauce may already be well seasoned.
  3. Let It Rest
Turn off the slow cooker and let the pasta bake rest, covered, for 5 to 10 minutes. This allows the sauce to thicken slightly and the flavors to meld. The resting time also helps the pasta absorb a bit more sauce, making each bite more flavorful.
Look for The dish is steaming and the cheese is stretchy when lifted with a spoon.
Tip Do not leave it on warm for too long, as the pasta may continue to soften.

After stirring, the sauce should be smooth and creamy, with the cream cheese fully incorporated. The chicken should be tender and register 165°F (74°C). The pasta should be al dente — tender but with a slight bite.

The mozzarella should be stretchy and well distributed. The overall consistency should be thick enough to coat the back of a spoon. If too thin, let it cook uncovered for a few minutes.

Serve and Enjoy

  1. Serve Warm
Using a large serving spoon, scoop the creamy chicken rigatoni onto plates or into bowls. Serve hot, with extra shredded mozzarella or grated Parmesan on the side if desired. The dish is best enjoyed right away while the cheese is still gooey and the sauce is bubbling.
Look for Each serving has a mix of chicken, pasta, and creamy sauce.
Tip Pair with a simple green salad or garlic bread to round out the meal.

The dish is ready to serve, with steam rising and cheese pulling in long strands from the spoon. Each serving should have a generous portion of chicken, pasta, and creamy sauce. The sauce should be glossy and rich, clinging to the rigatoni. The chicken should be fork-tender and juicy. Serve immediately for the best texture, while the cheese is still gooey and the dish is hot.

Common mistakes

A common mistake is lifting the lid too often, which releases steam and extends cooking time. Another is using cold cream cheese, which can leave lumps — always soften it first. Overfilling the slow cooker can cause the sauce to bubble over, so stick to the recommended amounts.

Also, avoid stirring too early; let the layers set for at least 3 hours. Finally, do not use thin pasta shapes like spaghetti or angel hair, as they will overcook and turn to mush.

How to tell it’s done

The dish is done when the chicken registers 165°F (74°C) on an instant-read thermometer and is tender enough to shred with a fork. The rigatoni should be al dente — firm to the bite but not crunchy.

The sauce should be thickened and creamy, coating the pasta nicely. The cheese should be fully melted and slightly golden around the edges. If the pasta is still hard, cover and cook for an additional 15–20 minutes. Do not overcook, as the pasta will turn mushy.

  • Poultry: 165°F (74°C) in the thickest part
