Tips for success
For the best texture, do not shred the chicken too finely; leave some larger chunks for a heartier bite. If you prefer a thicker sauce, remove the chicken and vegetables, then simmer the liquid on the stovetop for a few minutes to reduce.
You can also whisk in a slurry of cornstarch and water if a thicker sauce is desired, but the brodo is delicious as is.
To make this a complete one-pot meal, add 1 cup of dry couscous to the slow cooker during the last 20 minutes of cooking; it will absorb the brodo and cook perfectly.
For a low-carb version, serve over zucchini noodles that have been quickly sautéed in olive oil for 2 minutes. Fresh oregano is key—add it at the end to preserve its bright flavor.
Variations
- Add Olives: Stir in 1/2 cup of pitted Kalamata olives along with the capers for an extra briny, rich flavor. The olives will soften during cooking and add a savory depth.
- Use Chicken Thighs: Substitute boneless, skinless chicken thighs for the breasts. Thighs are even more forgiving and remain juicy; cook on low for 4 to 5 hours until tender.
- Make it Spicy: Add 1/2 teaspoon of red pepper flakes with the other ingredients for a gentle heat that complements the Mediterranean flavors without overpowering them.
- Skip the Wine: Replace the white wine with an equal amount of low-sodium chicken broth and add 1 tablespoon of lemon juice at the end for brightness. This makes the dish suitable for those avoiding alcohol.
Storage and make-ahead
- Fridge
- Refrigerate in an airtight container for up to 4 days. The flavors meld and deepen overnight; reheat gently with a splash of broth.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Add a splash of chicken broth or water to loosen the sauce if needed.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The chicken will continue to absorb the brodo, so it may become more flavorful. Reheat gently in the microwave or on the stovetop, adding a splash of chicken broth or water if the mixture seems dry.
You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on low as directed.
If starting from cold, add 30 minutes to the cooking time. Alternatively, cook the full recipe, cool, and refrigerate for up to 3 days before reheating.
Serving ideas
Spoon the shredded chicken and vegetables over lemon herb couscous, letting the brodo soak into the grains. Garnish with fresh oregano leaves for a pop of color and herbal aroma.
A side of crusty bread or a simple green salad with lemon vinaigrette completes the meal. For a low-carb option, serve over zucchini noodles that have been lightly sautéed until just tender.
This dish is also excellent stuffed into warm pita bread with a dollop of yogurt and a sprinkle of feta cheese. The bright, briny flavors pair well with a crisp white wine like Pinot Grigio or a light rosé. Leftovers can be turned into a hearty lunch by adding a handful of baby spinach to the warm chicken mixture and letting it wilt.

Crockpot Mediterranean Artichoke Chicken

Ingredients
- 4 boneless, skinless chicken breasts
- 1 can (14 oz) artichoke hearts, drained and quartered
- 2 cups cherry tomatoes
- 3 tbsp capers, drained
- 1/2 cup dry white wine, such as Pinot Grigio
- 2 tbsp olive oil
- 2 tbsp fresh oregano leaves, for serving
- lemon herb couscous or zucchini noodles, for serving
Instructions
- Place the chicken breasts in an even layer in the bottom of a 6-quart slow cooker. Scatter the drained artichoke hearts and cherry tomatoes over the chicken. Sprinkle the capers evenly over the top. Pour the white wine and olive oil around the chicken, making sure the liquid reaches the bottom of the pot. Do not stir; the layering helps the chicken stay moist and the tomatoes burst during cooking.
- Cover the slow cooker with the glass lid. Set the heat to LOW and cook for 4 hours, without lifting the lid during the first 3 hours. The tomatoes will burst and release their juices, creating a golden wine brodo. The chicken should be tender enough to shred easily with a fork when done.
- Using two forks, shred the chicken breasts directly in the slow cooker. Gently toss the shredded chicken with the artichokes, burst tomatoes, and capers so everything is coated in the wine brodo. If the chicken is not yet tender, cover and cook for an additional 30 minutes, then check again.
- To be sure the chicken is fully cooked, insert an instant-read thermometer into the thickest part of a piece of chicken. The temperature should read at least 165°F (74°C). Since the chicken is shredded, check a few pieces to ensure they all reach that temperature.
- Spoon the shredded chicken, artichokes, tomatoes, and wine brodo over lemon herb couscous or zucchini noodles. Garnish with fresh oregano leaves. Serve hot, with extra brodo spooned over each portion.
