Tips for success
For the best texture, cut the chicken into uniform 1-inch cubes so they cook evenly.
If you prefer a thicker sauce, you can mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the slow cooker during the last 15 minutes of cooking. Let it bubble and thicken before serving.
To make the dish spicier, add a pinch of red pepper flakes or a drizzle of sriracha when serving.
If you want extra brightness, a squeeze of lime juice over the top just before serving adds a fresh note. You can also garnish with sliced green onions or sesame seeds for a finishing touch.
Variations
- Spicy Mango Chicken: Add 1 teaspoon of sriracha or a pinch of red pepper flakes along with the honey and soy sauce for a spicy kick. The heat balances the sweetness of the mango and honey beautifully.
- Pineapple Honey Soy Chicken: Swap the mango for fresh pineapple chunks. The pineapple adds a tangy sweetness that pairs perfectly with the soy and honey. Cook the same way and serve over rice.
- Ginger Garlic Mango Chicken: Stir in 1 tablespoon of grated fresh ginger and 2 cloves of minced garlic with the sauce ingredients. This adds a fragrant, savory depth that complements the fruit and soy.
- Coconut Mango Chicken: Replace half of the soy sauce with coconut aminos and add 1/2 cup of unsweetened coconut milk. The coconut adds creaminess and a tropical note that goes well with the mango.

- Reheat
- Reheat in a microwave or on the stovetop over medium-low heat until hot. Stir occasionally to prevent sticking.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or on the stovetop until warmed through.
The sauce will thicken as it cools, so add a splash of water or chicken broth when reheating if needed.
You can prep the ingredients up to 24 hours in advance. Place the chicken, mango, pepper, honey, and soy sauce in a container or directly in the slow cooker insert, cover, and refrigerate.
When ready to cook, place the insert in the slow cooker and cook on LOW for 4 hours. This makes busy mornings even easier.
Serving ideas
Serve the mango honey soy chicken bites over steamed basmati rice or jasmine rice to soak up the delicious sauce. A side of steamed broccoli or green beans adds color and crunch. For a low-carb option, serve over cauliflower rice or with a simple green salad.
This dish also works well in lettuce wraps or as a filling for tacos. The sweet-savory flavor pairs nicely with cooling elements like sliced cucumber or a dollop of plain yogurt. For a heartier meal, add some roasted cashews or peanuts on top for extra crunch.

Crockpot Mango Honey Soy Chicken Bites

Ingredients
- 2 lb boneless skinless chicken breasts, cut into 1-inch cubes
- 2 cups ripe mango cubes (about 2 mangoes)
- 1 cup diced red bell pepper (about 1 medium)
- 1/4 cup honey
- 1/4 cup soy sauce
- Steamed basmati rice, for serving
Instructions
- Place the cubed chicken breasts in the bottom of a 6-quart slow cooker in an even layer. Scatter the mango cubes and diced red bell pepper over the chicken. Drizzle the honey and soy sauce evenly over the top. Do not stir.
- Cover the slow cooker and cook on LOW for 4 hours, or until the chicken is cooked through and tender. Do not lift the lid during the first 3 hours to keep the heat steady.
- After 4 hours, carefully remove the lid. Stir the mixture gently to coat the chicken and mango with the sauce. Check that the chicken is cooked through by cutting into a piece—it should be opaque and no longer pink. The internal temperature should read 165°F (74°C) on an instant-read thermometer.
- Spoon the mango honey soy chicken bites over steamed basmati rice. Use a slotted spoon to serve, letting the extra glaze drizzle over the top. Serve hot.
