Before you start

Before beginning, ensure your slow cooker insert is clean and dry. Gather all ingredients and measure the lemonade and soy sauce into a small pitcher for easy pouring. Remove the chicken from the refrigerator about 15 minutes before starting to take the chill off, though ensure it stays within safe handling guidelines.

Have a small ramekin ready for the brown sugar to make the sprinkling process clean and efficient. Clear enough counter space to work comfortably around the appliance.

Ingredients at a glance (4)
  • 10 skinless bone-in chicken drumsticks
  • 1 large lemon, sliced
  • 1/4 cup brown sugar
  • 1 cup lemonade mixed with soy sauce

Instructions

Initial Assembly

  1. Assemble in slow cooker
Place the skinless bone-in chicken drumsticks into the base of the slow cooker, ensuring they are arranged in an even layer. Take care to wash hands thoroughly after handling the raw poultry to prevent cross-contamination of kitchen surfaces.
Look for Drumsticks should fit snugly in the bottom of the slow cooker insert.
Tip If the drumsticks are large, arrange them so they do not overlap too much for even cooking.
  2. Layer with aromatics
Arrange the lemon slices over the top of the chicken drumsticks. Sprinkle the brown sugar evenly over the lemons and chicken to provide a base for the caramelization process during the long, slow cook.
Look for The lemon slices should cover most of the chicken surface.
Tip Remove any seeds from the lemon slices before placing them on the chicken.

At this stage, the drumsticks should be neatly arranged in the slow cooker insert, with the lemon slices creating a colorful, uniform layer over the top.

The brown sugar should be distributed evenly across the lemons to ensure it melts gradually into the juices as the cooker warms up. Everything should look organized and ready for the liquid to be added, with no ingredients spilling over the sides of the stoneware.

Adding the Braising Liquid

  1. Add liquids
Pour the mixture of lemonade and soy sauce over the drumsticks. Ensure the liquid distributes evenly across the entire surface of the chicken to help braise the meat effectively as the temperature rises.
Look for The liquid should partially submerge the drumsticks.
Tip Use a small pitcher to pour the liquid slowly to avoid splashing the sides of the cooker.

Once the lemonade and soy sauce mixture is poured over, the liquid should settle into the gaps between the drumsticks. The pot should smell fresh and slightly citrusy. Check that the liquid level is sufficient to keep the chicken moist but not so high that the chicken is completely submerged, which would result in boiling rather than the desired braising effect.

Final Braising and Glazing

  1. Slow cook and serve
Cover the slow cooker and cook on low for 4 hours. Once the time is up, ensure the chicken reaches an internal temperature of 165°F (74°C). Let the drumsticks rest for 5 minutes before serving to ensure the meat is tender and the sauce has thickened slightly.
Look for The chicken should be very tender and the sauce should have a glossy, thickened consistency.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If you prefer a thicker sauce, remove the lid for the final 30 minutes of cooking.

At the end of the cooking time, the kitchen should be filled with a pleasant, savory aroma. The chicken should be very soft, and the sauce should have reduced into a thick, syrupy glaze that coats the back of a spoon. The lemon slices will appear soft and translucent. Before serving, verify the internal temperature of the thickest drumstick to ensure it is cooked through and safe to consume.

Common mistakes

A common mistake is overcrowding the slow cooker, which can prevent the sauce from circulating properly around each piece of chicken. Another issue is using high heat settings, which may cause the sugars in the lemonade and brown sugar to burn or the chicken to toughen prematurely.

Always stick to the low setting for the best texture and flavor development. Finally, avoid lifting the lid frequently during the cooking process, as this releases heat and moisture, significantly extending the required cooking time.

How to tell it’s done

The chicken is done when it is opaque throughout and the meat is tender enough to easily pull away from the bone. Using a digital meat thermometer, ensure the thickest part of the drumstick reaches an internal temperature of 165°F (74°C).

The sauce should be reduced, slightly thickened, and appear glossy rather than watery. If the sauce is too thin, you can continue cooking with the lid off for a short period to allow for further evaporation and reduction.

  • Poultry: 165°F (74°C) in the thickest part
