Before you start
Before you start, make sure your slow cooker is clean and ready. If using fresh peaches, wash and slice them into thick wedges. If using frozen, thaw and drain them. Measure out the chili flakes and hot honey so everything is ready to go.
There is no need to preheat the slow cooker. Arrange the drumsticks in the insert, then add the peaches, chili flakes, and hot honey in that order. You can prepare this in the morning and let it cook while you go about your day.
Ingredients at a glance (4)
- 8 skinless chicken drumsticks
- 2 cups peach slices (fresh or frozen)
- 1 tsp chili flakes
- 1/2 cup hot honey
Instructions
Layer the Ingredients
- Layer the drumsticksPlace the skinless chicken drumsticks in the slow cooker insert, arranging them in a single layer around the bottom. If they overlap slightly, that is fine, but try to keep them as even as possible so they cook uniformly.Look for The drumsticks should cover the bottom of the slow cooker in one layer.Tip If using frozen drumsticks, thaw them in the refrigerator overnight first.
- Add the peachesSpoon the peach slices over the drumsticks, spreading them out so they are distributed evenly. The peaches will release juice as they cook, helping to create the sauce.Look for The peaches should cover the chicken evenly.Tip Fresh peaches work best, but frozen are fine if thawed and drained.
- Sprinkle the chili flakesSprinkle the chili flakes over the peaches and chicken. Use your fingers or a spoon to scatter them evenly so the heat is distributed throughout the dish rather than concentrated in one spot.Look for The chili flakes should be visible as small red specks across the surface.Tip Adjust the amount of chili flakes to your heat preference.
- Drizzle with hot honeyDrizzle the hot honey evenly over the chicken and peaches. Tilt the pitcher or spoon to make sure the honey coats as much surface area as possible. It will mix with the peach juices during cooking.Look for The honey should create a glossy sheen over the ingredients.Tip If your hot honey is too thick to drizzle, warm it slightly for a few seconds.
At the end of this phase, the drumsticks are arranged in a single layer, topped with peach slices, chili flakes, and a drizzle of hot honey.
The ingredients are colorful—pinkish chicken, golden peaches, red chili flakes, and amber honey. The air smells sweet and slightly spicy. Everything is ready to cook.
Slow Cook Until Tender
- Cover and cook on lowCover the slow cooker with the lid and set it to low. Cook for 4 to 5 hours, or until the chicken is tender and cooked through. Avoid lifting the lid during the first 3 hours to keep the heat steady.Look for The sauce will bubble gently around the edges, and the chicken will look opaque.Safe temperature 165°F (74°C) internal temperature (poultry)Tip Cooking on low gives the best texture; high can work in 2.5 to 3 hours but may make the chicken drier.
- Check for donenessAfter 4 hours, check the chicken by inserting an instant-read thermometer into the thickest part of a drumstick without touching bone. It should read at least 165°F (74°C). If not, continue cooking and check again after 30 minutes.Look for The thermometer should read 165°F (74°C) or higher.Safe temperature 165°F (74°C) internal temperature (poultry)Tip The meat should also pull easily from the bone when done.
After 4 to 5 hours on low, the sauce has turned a deep amber and the chicken is visibly tender. The kitchen smells of honey and peaches. The drumsticks are cooked through, and the sauce has thickened. The chicken should be easily pierced with a fork. This is the moment to check the internal temperature.
Rest and Serve
- Rest and serveTurn off the slow cooker. Using tongs, transfer the drumsticks to a serving plate, leaving the sauce and peaches in the slow cooker. Spoon some of the thickened peach-honey sauce over the chicken. Serve warm.Look for The sauce should be thick and cling to the chicken.Tip If the sauce is too thin, simmer it in a saucepan for a few minutes to reduce.
The drumsticks are transferred to a serving plate, and the sauce is spooned over the top. The chicken is glossy and sticky, with pieces of soft peach clinging to the meat. The sauce is thick enough to coat the back of a spoon. The dish is ready to serve, steaming and inviting.
Common mistakes
A common mistake is lifting the lid too often to check on the chicken. Every time you open the lid, heat escapes, which can extend the cooking time and affect the texture. Trust the process and wait until the minimum cooking time has passed.
Another mistake is using too much liquid. The peaches and honey create plenty of sauce, so do not add extra broth or water. Finally, avoid overcooking, which can make the chicken dry and stringy, even in a slow cooker.
How to tell it’s done
The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part of the drumstick, away from the bone. The meat should be tender and easily pull away from the bone.
The sauce should be thickened and cling to the chicken. If the sauce seems too thin, you can transfer it to a saucepan and simmer for a few minutes to reduce it, or leave it as is for a lighter sauce.
- Poultry: 165°F (74°C) in the thickest part
