Tips for success
For the best flavor, use a combination of sweet onions and a splash of white wine or sherry in the broth, but only if you have it on hand.
If you prefer a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir it into the slow cooker during the last 30 minutes of cooking.
This dish is forgiving — you can cook it on HIGH for 2 to 3 hours if you're short on time.
The chicken will still be tender, though the onions won't be quite as silky. Serve with crusty bread to soak up the extra sauce, or over egg noodles for a different take.
Variations
- Mushroom Swiss: Add 8 oz sliced mushrooms along with the onions, and substitute Swiss cheese for Gruyère. The mushrooms add an earthy depth that pairs beautifully with the creamy sauce.
- Thyme and White Wine: Replace 1/4 cup of the chicken broth with dry white wine for a brighter, more complex flavor. Use fresh thyme as directed, and finish with a teaspoon of Dijon mustard.
- Crispy Shallot Topping: Before serving, top the dish with crispy fried shallots or onions for added texture. Sprinkle them over the chicken and sauce just before serving to keep them crunchy.
- Bacon and Chive: Crumble 4 slices of cooked bacon over the finished dish and garnish with chopped fresh chives. The smoky bacon complements the sweet onions and nutty cheese perfectly.

Serving ideas
Serve the chicken and onions over a bed of creamy Yukon Gold mashed potatoes, spooning the rich Gruyère sauce over the top.
The potatoes soak up the sauce beautifully, making every bite comforting and satisfying. A side of steamed green beans or a simple green salad adds a fresh contrast.
For a lower-carb option, serve over cauliflower mash or roasted vegetables. The dish also pairs well with crusty bread for dipping into the sauce. Garnish with a few fresh thyme leaves or chopped parsley for color, if desired.

Crockpot Gruyère French Onion Chicken Cutlets

Ingredients
- 4 boneless skinless chicken breast cutlets (about 1 1/2 lb total)
- 2 large sweet onions (such as Vidalia), thinly sliced
- 1 cup low-sodium chicken broth
- 6 sprigs fresh thyme
- 1/2 cup heavy whipping cream
- 1 1/2 cups shredded Gruyère cheese (about 6 oz)
- 1/2 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- Yukon Gold mashed potatoes, for serving
Instructions
- Place the chicken breast cutlets in an even layer in the bottom of a 6-quart slow cooker. Season both sides with salt and black pepper. Scatter the sliced sweet onions over the top, then add the fresh thyme sprigs. Pour the chicken broth evenly over everything.
- Drizzle the heavy whipping cream evenly over the chicken and onions. Sprinkle the shredded Gruyère cheese generously over the top, covering the surface completely.
- Cover the slow cooker and cook on LOW for 4 hours or on HIGH for 2 to 3 hours, until the chicken is cooked through and registers 165°F (74°C) in the thickest part. The onions should be very soft and the sauce bubbling around the edges.
- Turn off the slow cooker and let the dish rest for 5 minutes. Remove the thyme sprigs. Serve the chicken and onions over warm Yukon Gold mashed potatoes, spooning the creamy Gruyère sauce over the top.
