Before you start

Before you start, make sure you have all your ingredients ready. Slice the flank steak thinly against the grain; this is easier if the steak is slightly chilled. Clean and thickly slice the portobello mushrooms. Peel the shallots, leaving them whole if they are small, or cutting larger ones in half.

Soften the cream cheese by leaving it at room temperature for about 30 minutes. Shred the Gruyère cheese. Have your slow cooker ready and all the ingredients within reach. There is no need to brown the meat or sauté the vegetables; this recipe is truly a dump-and-go meal.

Ingredients at a glance (6)
  • 2 lb flank steak, thinly sliced against the grain
  • 8 oz portobello mushrooms, thickly sliced
  • 6 shallots, peeled
  • 8 oz cream cheese, softened
  • 1 cup shredded Gruyère cheese
  • toasted garlic brioche slices, for serving

Instructions

Phase 1: Layer and Cook

  1. Layer the Ingredients
Place the sliced flank steak in the bottom of a 6-quart slow cooker. Scatter the portobello mushroom slices and peeled shallots over the beef. Drop the softened cream cheese in chunks on top, then sprinkle with the shredded Gruyère.
Look for The slow cooker will look full but the ingredients will settle as they cook.
Tip For even cooking, try to spread the beef in a single layer as much as possible.
  2. Cover and Cook
Cover the slow cooker with the lid. Cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours, until the beef is fork-tender and the sauce is bubbling. Let it rest for 3 minutes before slicing.
Look for The aroma of garlic and cheese will fill the kitchen as it cooks.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Avoid lifting the lid during cooking to keep the heat and moisture inside.

At the end of this phase, the slow cooker is filled with raw beef, mushrooms, shallots, and cheese. The cream cheese is in chunks and the Gruyère is sprinkled on top. When you close the lid and start the cooking process, you will begin to smell the garlic and cheese as the heat gently melts them. There is nothing to check yet except that the lid is secure and the slow cooker is set to the desired temperature.

Phase 2: Test for Tenderness

  1. Check the Beef
After the cooking time, check the beef by piercing a piece with a fork. It should shred easily and be very tender. If not, continue cooking for another 30 to 60 minutes. Let it rest for 3 minutes before slicing.
Look for The beef should be deeply browned and the sauce thickened slightly.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip If the sauce seems thin, remove the beef and mushrooms, then simmer the sauce on the stovetop to reduce.
  2. Rest the Meat
Turn off the slow cooker and let the beef rest in the sauce for at least 3 minutes before serving. This allows the juices to redistribute and the meat to become even more tender.
Look for The sauce will thicken slightly as it rests.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Use this time to toast the garlic brioche slices.

After the minimum cooking time, the slow cooker is bubbling and fragrant. The sauce has turned a golden brown, and the beef is visibly darker and tender. A fork should easily pierce the meat and it should pull apart with little resistance.

The mushrooms are soft and glossy, and the shallots are translucent. The sauce is slightly thickened and coats the back of a spoon. This is the moment to test the temperature and decide if it needs more time.

Phase 3: Rest and Serve

  1. Serve
Using a slotted spoon, transfer the beef, mushrooms, and shallots to a serving platter or individual plates. Spoon the creamy sauce over the top. Serve immediately with toasted garlic brioche slices for dipping.
Look for The sauce should be velvety and coat the back of a spoon.
Tip For a thicker sauce, stir in a tablespoon of cornstarch mixed with water and cook for a few minutes.

The slow cooker is turned off, and the dish is resting. The sauce has settled and thickened slightly. The beef is fork-tender, and the mushrooms and shallots are soft and flavorful. When you lift a spoonful, the sauce is velvety and clings to the meat. The aroma is rich and cheesy with a hint of garlic. Now you are ready to serve this comforting meal with toasted brioche on the side.

Common mistakes

One common mistake is lifting the lid too often to check on the food. Every time you open the slow cooker, heat escapes, which can extend the cooking time. Trust the recipe and resist the urge to peek until the minimum cooking time has passed. Another mistake is using low-quality cheese that does not melt well.

Pre-shredded cheese often contains anti-caking agents that prevent smooth melting, so it is best to shred your own Gruyère from a block. Finally, do not skip the resting time after cooking; this allows the meat to reabsorb its juices and become even more tender.

How to tell it’s done

The dish is done when the beef is fork-tender and easily shreds apart. The internal temperature of the beef should read at least 145°F (63°C) on an instant-read thermometer. The sauce should be bubbling and slightly thickened, and the mushrooms should be soft and slippery.

The shallots should be translucent and sweet. Give the pot a gentle stir before serving to combine everything. If the beef is not yet tender, continue cooking in 30-minute increments until it reaches the desired consistency.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
