Tips for success
For the most tender beef, choose tenderloin tips that are already trimmed of silverskin and excess fat. If you buy a whole tenderloin, cut it into 1-inch cubes yourself.
The size of the cubes matters: too large and they'll be tough, too small and they'll dry out. Aim for uniform pieces so they cook evenly.
The sauce is the star here, so don't skimp on the cheese. Use a good-quality aged Gruyère that you shred yourself—pre-shredded cheese often contains anti-caking agents that prevent smooth melting.
Soften the cream cheese fully before adding it, and let the slow cooker do the rest. If you want a thicker sauce, leave the lid off for the last 15 minutes of cooking.
Variations
- Add Mushrooms: Sauté 8 oz sliced cremini mushrooms in butter until golden and add them with the beef. They'll soak up the creamy sauce and add an earthy depth.
- Use Chicken Thighs: Swap the beef for boneless, skinless chicken thighs. Cook on low for 3-4 hours until the chicken reaches 165°F (74°C). The sauce will be just as rich.
- Make It Spicy: Add 1/2 teaspoon red pepper flakes or a diced jalapeño with the garlic for a gentle heat that cuts through the creamy sauce.
- Vegetarian Version: Replace the beef with extra potatoes and add 1 cup of frozen peas in the last 30 minutes. The sauce will still be creamy and satisfying.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; that's normal. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if needed to loosen the sauce.
You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on low as directed.
You may need to add 30 minutes to the cooking time since you're starting from cold. This is a great make-ahead for a busy day.
Serving ideas
Serve the beef and potatoes ladled over toasted garlic brioche slices, with extra sauce spooned on top. The brioche soaks up the rich gravy, making every bite satisfying.
A simple green salad with a bright vinaigrette would balance the richness, but the dish is hearty enough to stand alone.
For a more casual presentation, spoon the mixture into shallow bowls and garnish with chopped fresh parsley if desired. The creamy sauce pairs well with roasted vegetables or a side of steamed green beans. This is comfort food at its best—warm, creamy, and deeply flavorful.

Crockpot Gruyère Cream Garlic Potato Tenderloin Tips

Ingredients
- 2 lb beef tenderloin tips
- 1 1/2 lb baby Yukon Gold potatoes, halved
- 2 tbsp minced garlic
- 8 oz cream cheese, softened
- 1 1/2 cups shredded aged Gruyère cheese
- toasted garlic brioche slices, for serving
Instructions
- Place the beef tenderloin tips in the bottom of a 6-quart slow cooker. Scatter the halved baby Yukon Gold potatoes over and around the beef. Sprinkle the minced garlic evenly over the top.
- Drop the softened cream cheese block on top of the beef and potatoes. Sprinkle the shredded Gruyère over everything, covering the surface as evenly as possible. Do not stir.
- Cover the slow cooker and cook on low for 4 hours, or until the beef is fork-tender and the potatoes are easily pierced with a knife. Do not lift the lid during the first 3 hours. Let it rest for 3 minutes before slicing.
- After 4 hours, stir the sauce gently to blend the melted cheeses into a smooth gravy. Continue cooking on low for 30 minutes more, or until the beef reaches an internal temperature of at least 145°F (63°C) and the potatoes are completely tender. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the beef rest in the warm sauce for at least 3 minutes before serving. This allows the juices to redistribute and keeps the tenderloin tips moist.
- Ladle the beef, potatoes, and creamy Gruyère sauce over toasted garlic brioche slices on a plate. Serve immediately, spooning extra sauce over the top.
