Tips for success
For the best flavor, use a high-quality beef chuck and let it cook low and slow. The long cooking time breaks down the connective tissue, resulting in melt-in-your-mouth bites.
Don't rush it by cooking on high—low heat is essential for tender meat and a creamy sauce. If you have time, sear the beef in a hot skillet before adding it to the slow cooker for an extra layer of flavor, though the video doesn't show this step.
The sauce is the star here, so make sure the cream cheese and Gruyère are well incorporated. Stir gently at the end if needed, but avoid over-stirring, which can break down the meat.
If the sauce is too thin, remove the lid and cook on high for 15-20 minutes to reduce. For a thicker sauce, you can also mash a few potato pieces against the side of the slow cooker to release their starch. Serve with plenty of toasted bread to soak up every bit.
Variations
- Mushroom and Onion: Add 8 oz sliced cremini mushrooms and 1 chopped yellow onion with the beef. Sauté them in butter first for extra flavor, then layer as directed. The mushrooms add an earthy depth that pairs beautifully with the Gruyère.
- Spicy Kick: Add 1/2 teaspoon red pepper flakes or a diced jalapeño to the slow cooker for a subtle heat. You can also use pepper Jack cheese instead of Gruyère for a spicier sauce. Serve with a dollop of sour cream to cool it down.
- Herb-Infused: Toss 2 sprigs of fresh thyme and 1 bay leaf into the slow cooker before cooking. Remove them before serving. The herbs add a fragrant note that complements the beef and cheese. Garnish with fresh parsley.
- Bacon Lover's: Cook 4 slices of bacon until crisp, then crumble and sprinkle over the finished dish. Or, add 1/2 cup cooked, crumbled bacon to the slow cooker during the last 30 minutes of cooking for a smoky flavor.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken when chilled; thin with a little broth when reheating.
- Freezer
- Freeze in an airtight container for up to 3 months. Thaw overnight in the refrigerator before reheating gently on the stovetop or microwave.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbly. Add a splash of beef broth or water if too thick.

Reheat gently on the stovetop or in the microwave, stirring occasionally, until hot and bubbly. Avoid boiling, which can make the sauce separate. The flavors actually improve after a day in the fridge, making this a great make-ahead meal.
This dish is perfect for making ahead. Assemble the slow cooker the night before and store it in the refrigerator, then start cooking in the morning. If you do this, add 1 hour to the cooking time to account for the cold start.
Alternatively, cook the full dish, let it cool completely, and refrigerate for up to 4 days. Reheat gently on the stovetop or in the microwave. The beef and vegetables hold up well, and the sauce may thicken—just add a splash of broth to loosen it.
Serving ideas
Serve this hearty dish over toasted garlic brioche slices to soak up the rich, creamy sauce. The crunchy toast contrasts beautifully with the tender beef and soft vegetables. You can also serve it over mashed potatoes, rice, or egg noodles for an even more filling meal. A simple green salad with a tangy vinaigrette would brighten the plate and cut through the richness.
For a complete dinner, add a side of steamed green beans or roasted asparagus. The creamy sauce pairs well with acidic sides like pickles or a squeeze of lemon. If you have leftovers, try them as a filling for a baked potato or as a topping for a baked sweet potato. This dish is comfort food at its best, and it's sure to become a family favorite.

Crockpot Gruyère Cream Beef Bites

Ingredients
- 2 lb beef chuck stew meat, cut into 1-inch cubes
- 1 cup baby carrots
- 1 lb red bliss potatoes, quartered
- 8 oz cream cheese, softened
- 1 cup shredded Gruyère cheese
- Toasted garlic brioche slices, for serving
Instructions
- Place the beef chuck cubes in the bottom of a slow cooker. Scatter the baby carrots and quartered red potatoes around the beef, distributing them evenly.
- Drop the softened cream cheese block on top of the beef and vegetables. Sprinkle the shredded Gruyère over everything.
- Cover the slow cooker and cook on low for 6 to 8 hours, until the beef is fork-tender and the sauce is bubbling and thickened. Do not stir during the first 4 hours to allow the cheese to melt gradually. Let it rest for 3 minutes before slicing.
- After 6 hours, check the beef. It should be fork-tender and the internal temperature should read at least 145°F (63°C). If not done, continue cooking for another 30 minutes and check again. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the beef rest in the sauce for at least 3 minutes. This allows the juices to redistribute and keeps the meat moist.
- Toast garlic brioche slices. Ladle the beef, vegetables, and sauce over the toast and serve immediately.
