Tips for success
For the best flavor, choose a garlic-herb butter with fresh herbs like thyme, rosemary, or parsley. The butter should be well-chilled before cutting so it doesn't melt too quickly when placed on the hot roast.
If you're using a store-bought cowboy butter, check the label for added salt — you may need to adjust seasoning later. The butter is the only seasoning in this recipe, so make sure it's a good one.
If you prefer a thicker gravy, remove the roast and vegetables from the slow cooker and whisk a slurry of 1 tablespoon cornstarch and 2 tablespoons cold water into the remaining liquid. Cook on high for 10 minutes until thickened.
Alternatively, you can simply spoon the thin, buttery sauce over the meat as is — it's delicious either way. For a brighter finish, stir in a splash of fresh lemon juice or a handful of chopped parsley just before serving.
Variations
- Red Wine Gravy: Add 1/2 cup of dry red wine to the slow cooker before cooking. The wine adds depth and complexity to the sauce. If the sauce seems thin, whisk in a cornstarch slurry at the end.
- Mushroom and Onion: Add 8 oz of sliced cremini mushrooms and 1 large onion, cut into wedges, along with the shallots and carrots. The mushrooms will release moisture and create an even richer, earthier gravy.
- Spicy Chipotle: Mix 1 teaspoon of chipotle powder into the garlic-herb butter before placing it on the roast. The smokiness and gentle heat add a new dimension without overwhelming the dish.
- Herb-Crusted: Before placing the butter on the roast, rub the meat with a blend of 1 teaspoon each of dried thyme, rosemary, and black pepper. This adds an extra layer of aromatic flavor that permeates the meat as it cooks.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. The sauce will thicken when chilled; add a splash of broth when reheating.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently in a saucepan over low heat or in the microwave, adding a splash of beef broth or water to loosen the sauce.
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. The meat will absorb more flavor as it sits, making it even better the next day.
Reheat gently on the stovetop or in the microwave, adding a splash of water or beef broth if the sauce has thickened too much. The shallots and carrots will soften further, but they'll still be delicious.
This recipe is perfect for meal prep. You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, simply place the insert in the slow cooker and turn it on.
Alternatively, cook the roast a day ahead, refrigerate the meat and sauce separately, then reheat gently before serving. The flavors meld beautifully overnight.
Serving ideas
Serve the shredded roast and vegetables over a bed of warm buttered egg noodles, which soak up the rich garlic-butter gravy beautifully. Mashed potatoes, rice, or crusty bread are also excellent choices for catching every drop of the sauce. For a lighter option, serve alongside steamed green beans or a crisp green salad to balance the richness.
This dish is a complete meal in itself, with the meat and vegetables providing plenty of substance. If you're feeding a crowd, you can easily double the recipe — just make sure your slow cooker is large enough. Leftovers are wonderful in sandwiches, over baked potatoes, or stirred into pasta the next day. Garnish with fresh parsley or chives for a pop of color.

Crockpot Garlic Butter Bottom Round Roast with Shallots and Carrots

Ingredients
- 3 1/2 lb beef bottom round roast
- 8 whole shallots, peeled
- 1 lb baby carrots
- 4 tbsp garlic-herb compound butter (cowboy butter), cut into medallions
Instructions
- Place the beef bottom round roast in the center of the slow cooker. Scatter the peeled whole shallots and baby carrots evenly around the roast. There’s no need to brown the meat first — the slow cooker does all the work. If the roast is larger than the bottom of the cooker, trim it slightly to fit, but keep it whole.
- Place the four medallions of garlic-herb compound butter evenly across the top of the roast. The butter will melt as the cooker heats, basting the meat and vegetables with rich, savory flavor. No need to stir or spread — just let it melt and do its job.
- Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 5 to 6 hours, until the roast is fork-tender and easily shreds. The exact time depends on the size and thickness of the roast. Avoid lifting the lid during cooking to keep the heat steady. Let it rest for 3 minutes before slicing.
- After the minimum cooking time, check the roast for doneness. Insert a fork into the thickest part; it should slide in easily and the meat should start to separate. If it’s still tough, continue cooking for another 30 minutes and check again. The internal temperature should read at least 145°F (63°C) for medium-rare, but for pot roast you’ll likely want it higher, around 190°F (88°C), for that fall-apart texture.
- Once the roast is tender, turn off the slow cooker and let the meat rest in the cooking liquid for at least 10 minutes. This allows the juices to redistribute, making the meat even more succulent. Keep the lid on to retain warmth.
- Using two forks, shred the roast directly in the slow cooker, mixing it with the buttery cooking liquid, shallots, and carrots. The meat should pull apart easily into thick, tender strands. Stir gently to coat everything in the rich garlic-butter gravy.
- Spoon the shredded roast, shallots, and carrots over warm buttered egg noodles, or serve as is with crusty bread. The rich, garlicky gravy is perfect for soaking into the noodles. Garnish with fresh parsley if desired.
