Tips for success
For the best texture, shred the chicken while it's still warm—it pulls apart more easily and absorbs the sauce better.
If you have time, let the shredded chicken sit in the slow cooker on warm for 10 to 15 minutes before serving to allow the flavors to meld. This also helps the sauce thicken slightly.
This dish is forgiving and adaptable. If you prefer a thinner sauce, add a splash of chicken broth or water before cooking.
For a thicker, more concentrated sauce, remove the lid for the last 30 minutes of cooking. You can also switch up the salsa—try a verde salsa for a tangy twist or a chipotle salsa for extra smokiness.
Variations
- Spicy Chipotle: Use chipotle salsa and add 1-2 diced chipotle peppers in adobo sauce for a smoky, spicy kick. Garnish with fresh cilantro and a splash of lime.
- Green Salsa Version: Swap the red salsa for a tangy tomatillo salsa verde. Add a can of diced green chiles for extra flavor. The result is brighter and more acidic.
- Beef Fiesta: Replace the chicken with 1 1/2 pounds of beef stew meat. Cook on low for 6-8 hours until the beef is fork-tender. Shred and serve as you would the chicken.
- Vegetarian Black Bean: Omit the chicken and add an extra can of black beans and 1 cup of cooked rice. Cook on low for 2-3 hours until heated through and the cheese is melted.

Serving ideas
Serve this fiesta chicken over steamed Spanish rice for a complete meal, or spoon it into warm corn or flour tortillas for tacos.
Top with fresh cilantro, diced avocado, or a dollop of sour cream if desired. A squeeze of lime adds brightness and cuts through the richness of the cheese.
This dish also works well as a filling for burrito bowls, nachos, or quesadillas. For a low-effort party dish, set it out with tortilla chips and let guests scoop it up. Leftovers can be transformed into a quick lunch by reheating and serving over a bed of greens or in a wrap.

Crockpot Fiesta Chicken with Oaxaca Cheese

Ingredients
- 1 1/2 lb boneless skinless chicken breasts
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup frozen fire-roasted corn kernels
- 1 1/2 cups chunky roasted red tomato salsa
- 8 oz shredded Oaxaca cheese
- 1 cup shredded Mexican four-cheese blend
Instructions
- Place the chicken breasts in the bottom of the slow cooker in a single layer. Pour the black beans, corn, and salsa over the chicken, spreading them evenly. Do not stir; the layers will create a nice texture as they cook.
- Sprinkle the shredded Oaxaca cheese and Mexican four-cheese blend evenly over the top of the salsa mixture. Cover the slow cooker with the lid.
- Cook on low for 4 to 5 hours, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). The cheese will melt and bubble around the edges.
- Once the chicken is cooked, remove it to a cutting board and shred with two forks. Return the shredded chicken to the slow cooker and stir gently to combine with the beans, corn, and sauce.
- Serve the fiesta chicken over steamed Spanish rice or in warm tortillas. Garnish with fresh cilantro or a squeeze of lime if desired (optional).
