Tips for success
For the best flavor, use a combination of red, yellow, and orange bell peppers. They not only look beautiful but also offer a sweet, mild taste that complements the creamy sauce.
If you like a little heat, add a diced jalapeño or a pinch of cayenne pepper along with the other seasonings. The lime juice is essential for brightening the dish—don't skip it, as it balances the richness of the cheeses.
To make this dish even more hands-off, you can assemble everything in the slow cooker insert the night before and store it in the refrigerator. In the morning, simply place the insert in the slow cooker and turn it on.
This is a great make-ahead strategy for busy days. When reheating leftovers, add a splash of chicken broth or milk to loosen the sauce if it thickens upon cooling.
Variations
- Spicy Jalapeño Fiesta: Add 1-2 diced jalapeños (seeds removed for less heat) along with the peppers. For extra smokiness, include 1 teaspoon of smoked paprika or chipotle powder. This adds a nice kick without overwhelming the dish.
- Cilantro-Lime Twist: Stir in 1/4 cup of chopped fresh cilantro and the zest of one lime just before serving. The fresh herbs and citrus brighten the creamy sauce and add a burst of flavor. This is especially good when served over rice.
- Black Bean and Corn Addition: Add a can of drained black beans and a cup of frozen or canned corn along with the peppers. This stretches the dish further and adds texture and color. It's a great way to make it more substantial.
- Chicken Thigh Variation: Use boneless, skinless chicken thighs instead of breasts. Thighs are more forgiving and stay moist even if cooked a bit longer. They also shred beautifully and have a richer flavor that pairs well with the cheese sauce.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently with a splash of broth to keep the sauce creamy.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in the microwave in 30-second intervals, stirring between, or on the stovetop over medium-low heat.
Store any leftovers in an airtight container in the refrigerator for up to 4 days. The sauce may thicken as it cools, so when reheating, add a little chicken broth or water to restore a creamy consistency. Reheat gently in the microwave or on the stovetop until heated through.
This dish can be assembled up to 24 hours in advance. Place the chicken, peppers, onion, lime juice, and seasonings in the slow cooker insert, then top with the cream cheese and cheddar.
Cover and refrigerate overnight. When ready to cook, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time to account for the chilled ingredients.
Serving ideas
Serve this fiesta chicken over fluffy white rice or cilantro-lime rice for a satisfying meal. The creamy sauce soaks into the rice, making each bite rich and flavorful.
You can also spoon it into warm flour or corn tortillas and top with your favorite fajita fixings like salsa, sour cream, or avocado. For a lighter option, serve it in lettuce cups or over a bed of greens.
This dish is also great for meal prep. Portion it into containers with rice and vegetables for easy lunches throughout the week. It freezes well, too, so you can make a double batch and save half for later. The flavors develop even more after a day in the fridge, making leftovers taste just as good, if not better, than the first serving.

Crockpot Fajita Fiesta Chicken with Cheddar Queso

Ingredients
- 1 1/2 lb boneless skinless chicken breasts
- 3 bell peppers (red, yellow, orange), sliced
- 1 medium red onion, sliced
- 2 tbsp fresh lime juice
- 8 oz cream cheese, softened and cubed
- 2 cups shredded sharp cheddar cheese
- 1 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Place the chicken breasts in the bottom of a 6-quart slow cooker in a single layer. Scatter the sliced bell peppers and red onion over the chicken. Drizzle with fresh lime juice and season with salt and black pepper.
- Place the cubed cream cheese in the center of the slow cooker, then sprinkle the shredded cheddar over the top. Do not stir; the cheeses will melt and create a sauce as the slow cooker works.
- Cover the slow cooker and cook on LOW for 4 hours or on HIGH for 2 hours, until the chicken is cooked through and registers 165°F (74°C) in the thickest part. The peppers should be tender and the sauce bubbly.
- Remove the chicken to a cutting board and shred with two forks. Return the shredded chicken to the slow cooker and stir everything together until the chicken is coated in the creamy cheese sauce and the peppers and onions are evenly distributed.
- Spoon the fiesta chicken over warm rice, into tortillas, or onto a plate. Serve immediately, while hot and bubbling.
