Tips for success
For the most flavorful sauce, use a good-quality au jus or beef broth. The sour cream and Dijon will mellow as they cook, so do not be shy with the mustard.
If you like a sharper tang, add a spoonful of Dijon after shredding, just before serving. Taste the sauce and adjust with salt and pepper — the au jus can be salty, so season gently at first.
To make the sauce extra silky, whisk it vigorously before serving. This helps reincorporate any separated fat and creates a smooth, glossy texture.
If you prefer a thicker gravy, remove the pork and vegetables, then simmer the liquid on the stovetop for 5 to 10 minutes. You can also mash a few of the cooked shallots into the sauce to thicken it naturally and add sweetness.
Variations
- Add mushrooms: Slice 8 ounces of cremini mushrooms and add them with the shallots and carrots. They will release moisture and soak up the sauce, adding an earthy depth to the dish.
- Use chicken: Swap the pork for a 3-pound boneless, skinless chicken thigh roast. Cook on LOW for 6 to 7 hours, until the chicken reaches 165°F (74°C) and shreds easily.
- Make it spicy: Stir 1 teaspoon of crushed red pepper flakes or a minced jalapeño into the sour cream mixture before adding to the pot. The heat will mellow as it cooks, leaving a gentle warmth.
- Herb twist: Add 2 sprigs of fresh thyme and 1 bay leaf to the pot along with the vegetables. Remove before serving. The herbs add a subtle aromatic note that complements the Dijon.
Storage and make-ahead
- Fridge
- Store in an airtight container in the fridge for up to 4 days. The sauce may thicken; stir in a splash of broth or water when reheating.
- Freezer
- Freeze shredded pork and vegetables in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat gently in a saucepan over medium-low heat, adding a little broth or water to loosen the sauce. Or microwave in 30-second bursts, stirring between.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The pork and vegetables will keep well, and the flavors will continue to meld. Reheat gently in the microwave or on the stovetop with a splash of broth or water to loosen the sauce.
This recipe is ideal for meal prep. Cook it up to 2 days ahead, shred the pork, and keep it in the refrigerator. The sauce will thicken as it cools; add a little broth when reheating. You can also freeze the shredded pork in portions for quick dinners later.
Serving ideas
Spoon the shredded pork over steamed white rice, mashed potatoes, or egg noodles. The creamy Dijon sauce soaks into the starch beautifully, making every bite rich and satisfying.
For a lighter option, serve it over cauliflower rice or a bed of greens. The shallots and carrots are already in the pot, so you have a complete meal in one bowl.
Garnish with a sprinkle of fresh parsley or chives if you have them, though the dish is delicious without. A side of crusty bread is perfect for sopping up the extra sauce.
This is comfort food at its best — warm, hearty, and deeply flavorful. Pair it with a simple green salad for a balanced plate.

Crockpot Dijon Cream Pork Sirloin Roast

Ingredients
- 3 1/2 lb boneless pork sirloin roast
- 8 whole shallots, peeled
- 2 cups baby carrots
- 1 cup sour cream
- 1/4 cup whole-grain Dijon mustard
- 1 cup au jus
- Steamed white rice, for serving
Instructions
- Place the pork sirloin roast in the center of a 6-quart slow cooker. Scatter the peeled whole shallots and baby carrots around the roast, tucking them against the sides so they surround the meat evenly.
- Dollop the sour cream over the top of the roast, spreading it lightly. Spoon the whole-grain Dijon mustard over the sour cream. Pour the au jus along the side of the pot, not directly over the top, so the sauce pools around the meat.
- Place the lid securely on the slow cooker. Set it to LOW and cook for 8 to 10 hours, until the pork is fork-tender and easily shreds. Avoid opening the lid during cooking to keep the heat steady. Let it rest for 3 minutes before slicing.
- Once the pork is tender, transfer it to a cutting board. Use two forks to shred the meat into bite-size pieces, discarding any large pieces of fat. Return the shredded pork to the slow cooker and stir gently to coat with the sauce. Let it rest for 3 minutes before slicing.
- Let the shredded pork rest in the warm slow cooker for at least 3 minutes before serving. This allows the juices to redistribute and ensures each bite stays moist.
- Spoon steamed white rice onto serving plates. Top with a generous portion of the shredded pork, shallots, and carrots. Ladle extra pan sauce over each serving.
