Tips for success
For the best flavor, use freshly shredded white cheddar instead of pre-shredded. Pre-shredded cheese often contains cellulose, which can make the sauce grainy. Also, make sure to soften the cream cheese before adding it to the slow cooker.
This ensures it melts smoothly into the stew without leaving lumps. If you prefer a spicier stew, add a diced jalapeño or a pinch of cayenne pepper along with the poblano.
To thicken the stew further, remove the lid during the last 30 minutes of cooking. This allows excess liquid to evaporate. If you want a smoother texture, use an immersion blender to partially blend the stew, leaving some chunks for texture.
For a smoky flavor, you can add a teaspoon of smoked paprika or chipotle powder. Serve with warm tortillas or cornbread for a complete meal.
Variations
- Spicy Chipotle: Add 1-2 chipotle peppers in adobo sauce, minced, along with the other ingredients for a smoky, spicy kick. Reduce the amount if you prefer mild heat.
- Vegetarian Version: Omit the chicken and use vegetable broth instead of chicken broth. Add an extra can of black beans or pinto beans for protein. Cook on low for 2-3 hours until heated through and flavors meld.
- Cheesy Chicken and Rice: After shredding the chicken, stir in 2 cups of cooked white or brown rice. Let it warm through for 10 minutes. This makes the stew more like a casserole and stretches it further.
- Green Chile Twist: Replace one of the roasted poblanos with a 4-ounce can of diced green chiles for extra flavor without extra heat. Add a teaspoon of ground cumin for warmth.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. The stew thickens when chilled; add a splash of broth when reheating.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat on the stovetop over medium-low heat, stirring occasionally, until hot. Or microwave in 1-minute intervals, stirring between each, until heated through.
Store leftover stew in an airtight container in the refrigerator for up to 4 days. The stew will thicken as it cools; add a splash of chicken broth or water when reheating to reach the desired consistency. Reheat gently on the stovetop or in the microwave until hot. The toppings are best added fresh when serving.
This stew can be assembled in the slow cooker insert the night before. Layer all ingredients in the insert, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on LOW as directed.
You may need to add 30 minutes to the cooking time since the ingredients start cold. Alternatively, cook the stew fully, let it cool, and refrigerate for up to 3 days before reheating.
Serving ideas
Serve this stew in deep bowls to showcase its thick, creamy texture. Top each bowl with a generous handful of crispy tortilla strips, a few chunks of creamy avocado, a swirl of sour cream crema, and a sprinkle of fresh cilantro. A lime wedge on the side lets everyone add a bright, citrusy squeeze just before eating.
For a heartier meal, serve the stew alongside warm cornbread or flour tortillas. It also pairs well with a simple green salad dressed with lime vinaigrette.
The stew is substantial on its own, but these additions make it a complete, satisfying dinner. Leftovers can be used as a filling for tacos or burritos, or spooned over rice.

- 3 roasted, diced poblano peppers
- 1 can (15 oz) black beans, drained and rinsed
- 2 cups chicken broth

Instructions
- Place the chicken thighs in the bottom of a 6-quart slow cooker. Add the roasted diced poblano peppers, drained black beans, chicken broth, softened cream cheese, and shredded white cheddar. Do not stir; simply spread the ingredients evenly over the chicken.
