Tips for success
For the best texture, cut the chicken into uniform bite-size pieces so they cook evenly. If you prefer larger chunks, adjust the cooking time accordingly.
You can also add a pinch of black pepper or a dash of hot sauce to the seasoning for extra heat. To make the dish more substantial, serve it over rice, quinoa, or with a side of crusty bread to soak up the sauce.
If you want a thicker sauce, remove the peppers from the slow cooker and whisk the remaining sauce in the pot. You can also stir in a tablespoon of cornstarch mixed with water and let it bubble for a few minutes.
For a more browned, roasted flavor, you can broil the peppers for 2-3 minutes after cooking, but that adds an extra step and is optional.
Variations
- Spicy Kick: Add 1/2 teaspoon of cayenne pepper or a few dashes of hot sauce to the seasoning mix. You can also use pepper jack cream cheese instead of cheddar for a spicy, melty topping.
- Veggie Boost: Stir in 1 cup of frozen corn or black beans with the chicken before cooking. This adds color and texture, and makes the dish stretch further.
- Cheesy Topping: After cooking, sprinkle 1/2 cup of shredded cheddar cheese over the peppers and let it melt under the broiler for 2-3 minutes for a golden, bubbly crust.
- Herb Infusion: Add 1 teaspoon of dried oregano or Italian seasoning to the chicken along with the paprika. Or, stir in fresh chopped parsley or basil just before serving for a fresh finish.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze cooked peppers in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in the microwave in 1-minute intervals, or in a covered skillet over low heat for 10-15 minutes, until warmed through.
Store leftover stuffed peppers in an airtight container in the refrigerator for up to 4 days. The peppers will soften further as they sit, but the flavor remains delicious.
Reheat gently in the microwave or in a covered skillet over low heat until warmed through. If the sauce has thickened too much, add a splash of chicken broth or water when reheating.
You can assemble the stuffed peppers up to 24 hours ahead. Prepare the peppers, fill with chicken and seasoning, then top with cream cheese. Cover the slow cooker insert and refrigerate. When ready to cook, place the insert in the slow cooker and cook as directed, adding 30-45 minutes to the cooking time since the ingredients start cold.
Serving ideas
Serve the stuffed peppers as a main course with a simple green salad or steamed vegetables on the side. The creamy sauce pairs well with rice, mashed potatoes, or crusty bread.
For a low-fuss meal, you can also serve them on their own—they are satisfying enough to stand alone. Garnish with fresh herbs like parsley or chives if you like, though the video does not show this.
These peppers are great for meal prep. Make a batch on Sunday and enjoy them for lunch or dinner throughout the week. They also reheat well, making them a good option for bring-to-work meals. If you have extra sauce, spoon it over the peppers when serving for extra richness.

Crockpot Cream Cheese Chicken Stuffed Peppers

Ingredients
- 3 large bell peppers (any color), halved and seeded
- 1 1/2 lb boneless skinless chicken breast, cut into bite-size pieces
- 1 tsp paprika
- 1/2 tsp garlic powder
- 8 oz cheddar cream cheese, softened
Instructions
- Cut the bell peppers in half through the stem, then remove the seeds and membranes. Arrange the pepper halves cut side up in the slow cooker insert. Cut the chicken breast into bite-size pieces and tuck them into each pepper half, filling them generously.
- In a small bowl, mix the paprika and garlic powder. Sprinkle the seasoning evenly over the chicken pieces in the peppers, using your fingers to coat the chicken well.
- Spoon the cheddar cream cheese over the chicken in each pepper half, dividing it evenly. It does not need to be perfectly smooth; it will melt as it cooks.
- Cover the slow cooker and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the chicken is cooked through and the peppers are tender.
- Insert an instant-read thermometer into the thickest piece of chicken. It should read at least 165°F (74°C). If not, continue cooking for another 30 minutes and check again.
- Turn off the slow cooker and let the peppers rest for 5 minutes. Use a spatula to carefully transfer each pepper half to a serving plate. Spoon any extra creamy sauce from the bottom of the slow cooker over the top.
