Tips for success
For the most flavorful sauce, use a good-quality chipotle sauce. If you prefer a chunkier texture, leave the cranberries whole; if you like a smoother sauce, mash them slightly before serving.
You can also add a squeeze of fresh lime juice before serving to brighten the flavors.
This recipe is incredibly forgiving. If you have more time, cook on low for 5 hours for even more tender chicken.
If you're in a hurry, cook on high for 2 to 3 hours, but check the temperature early. The sauce can be made ahead and stored separately, then combined with freshly cooked chicken for a quick meal.
Variations
- Spicy Mango: Replace the cranberry sauce with mango chutney and use 1/2 teaspoon of red pepper flakes for a sweet and spicy tropical twist.
- Chipotle Lime: Add the zest and juice of one lime along with the chipotle sauce. Finish with fresh cilantro for a bright, zesty flavor.
- Honey Chipotle: Stir in 2 tablespoons of honey with the chipotle sauce for extra sweetness and a glossy finish. Reduce the chili powder to 1 teaspoon.
- Cranberry Orange: Add the zest of one orange and 1/4 cup of orange juice to the sauce. This enhances the cranberry flavor and adds a citrusy note.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken; add a splash of water or broth when reheating.
- Freezer
- Freeze cooked chicken and sauce in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently.
- Reheat
- Reheat in a saucepan over medium heat, stirring occasionally, until warmed through. Add a little water or broth if the sauce is too thick.
Store leftover chicken and sauce in an airtight container in the refrigerator for up to 4 days. The flavors will meld and deepen overnight. Reheat gently in the microwave or on the stovetop, adding a splash of water or chicken broth if the sauce has thickened too much.
You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed, adding 30 minutes to the cooking time to account for the cold start. This is a great make-ahead option for busy days.
Serving ideas
Serve the chicken with the sauce spooned generously over the top. It pairs beautifully with steamed rice, mashed potatoes, or crusty bread to soak up the sauce. A simple green salad with a tangy vinaigrette balances the sweetness of the cranberries.
For a festive twist, serve this for a holiday dinner alongside roasted vegetables and wild rice.
The cranberry and chipotle flavors are reminiscent of holiday flavors but with a smoky kick. Garnish with fresh cilantro or chopped green onions for a pop of color and freshness.

Slow Cooker Cranberry Chipotle Chicken Breasts

Ingredients
- 2 lb boneless skinless chicken breasts
- 1 medium red onion, diced
- 2 tsp chili powder
- 1 can (14 oz) whole-berry cranberry sauce
- 1/2 cup chipotle sauce
Instructions
- Place the chicken breasts in a single layer in the slow cooker insert. Scatter the diced red onion evenly over the chicken. Sprinkle the chili powder over the chicken and onion, covering the surface as evenly as possible.
- Spoon the whole-berry cranberry sauce over the chicken. Add the chipotle sauce and stir gently to combine the sauces with the onion and chili powder, coating the chicken breasts.
- Cover the slow cooker and cook on low for 4 to 5 hours, until the chicken is tender and cooked through. The sauce will thin and become pourable as the chicken releases juices.
- Use an instant-read thermometer inserted into the thickest part of a chicken breast to check that it registers at least 165°F (74°C). If not, continue cooking for 30 more minutes and check again.
- Turn off the slow cooker and let the chicken rest in the sauce for 5 minutes. This allows the juices to redistribute and makes the chicken easier to handle.
- Using tongs, transfer the chicken breasts to a serving platter. Spoon the cranberry chipotle sauce over the top, making sure to include the cranberries and onion.
- For a thicker sauce, simmer the sauce in a small saucepan over medium heat for 5 minutes until reduced. Pour over the chicken and serve immediately.
