Before you start

Before beginning, ensure the slow cooker insert is clean and properly seated in the base. Take the bag of frozen meatballs out of the freezer just before you are ready to assemble, as keeping them frozen helps them maintain their shape during the initial stages of cooking.

Have your measuring cups ready and clear enough counter space to accommodate the slow cooker. If you are preparing this for a specific time, remember that the cooking process requires four hours, so plan your start time accordingly to ensure they are ready for your guests.

Ingredients at a glance (4)
  • 32 count frozen meatballs
  • 1 can jellied cranberry sauce
  • 1/4 cup brown sugar
  • 1 cup chili sauce

Instructions

Preparation

  1. Assemble the ingredients
Place the frozen meatballs into the bottom of the slow cooker insert. Ensure they are distributed in an even layer to allow for consistent heating during the cooking process.
Look for meatballs are evenly spread
Tip Do not thaw the meatballs before adding them to the slow cooker.

At this stage, the slow cooker is prepared with the frozen meatballs neatly arranged. The ingredients are assembled, and the environment is ready for the cooking phase to begin.

Everything should look clean and organized, with the meatballs distributed evenly to prepare for the addition of the sauce. Verify that the power cord is accessible and that the slow cooker is placed on a stable, heat-resistant surface away from any water sources or flammable materials.

Glazing

  1. Add the sauce components
Spoon the jellied cranberry sauce over the meatballs, then sprinkle the brown sugar evenly across the top. Pour the chili sauce over the entire mixture to ensure everything is well coated.
Look for sauce covers the meatballs
Tip Use a spatula to scrape every bit of the cranberry sauce from the can.

The sauce ingredients have been added, and the meatballs are now partially coated. The cranberry sauce, brown sugar, and chili sauce are sitting on top, ready to melt down into a unified mixture. At this point, the slow cooker is covered and the heat is activated. The kitchen should remain quiet, and the slow cooker should be left undisturbed to allow the gentle heat to begin the process of melting the cranberry and incorporating the sugar and chili flavors.

Cooking

  1. Cook and serve
Cover the slow cooker and cook on low for four hours. Ensure the internal temperature of the meatballs reaches at least 160°F (71°C) before serving. Transfer to a platter and serve warm.
Look for meatballs are glossy and steaming
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Stir the meatballs halfway through if the sauce appears to be clumping.

After four hours, the meatballs are fully cooked, glossy, and coated in a thickened, flavorful sauce. They should be steaming and aromatic, with the sauce having a rich, dark color and a syrupy consistency. Before serving, check the internal temperature to ensure it has reached the required 160°F (71°C). Once confirmed, the meatballs are ready to be transferred to a serving platter or kept on the warm setting for your guests to enjoy throughout the event.

Common mistakes

A common mistake is overcrowding the slow cooker, which can prevent the sauce from coating the meatballs evenly. Ensure there is enough space for the ingredients to circulate. Another error is checking the dish too frequently by lifting the lid, which lets out heat and extends the cooking time.

Resist the urge to add water, as the cranberry sauce and the moisture from the meatballs provide more than enough liquid to keep the dish from drying out during the four-hour cooking cycle.

How to tell it’s done

The meatballs are considered done when they are heated through and the sauce has reduced into a thick, glossy, and uniform glaze. Use a digital meat thermometer to verify the internal temperature of the largest meatball, which should reach at least 160°F (71°C).

The sauce should cling to the meatballs, and they should be steaming hot. If the sauce remains too thin, you can remove the lid for the final thirty minutes of cooking to allow some of the excess moisture to evaporate.

  • Ground meat: 160°F (71°C) in the thickest part
