Tips for success
For the creamiest result, use full-fat Alfredo sauce and whole-milk ricotta. Lower-fat versions can separate or become watery during slow cooking.
If you prefer a thicker sauce, stir in a slurry of 1 tablespoon cornstarch and 2 tablespoons water during the last 30 minutes of cooking. For extra color and freshness, sprinkle chopped parsley or basil over the top before serving.
To prevent the tortellini from becoming too soft, choose a slower cook time and check for doneness early. If your slow cooker tends to run hot, reduce the cook time to 3 1/2 hours.
For a golden, bubbly top, you can transfer the cooked dish to a broiler-safe pan and broil for 2-3 minutes, but this is optional and not shown in the video.
Variations
- Vegetarian: Omit the chicken and increase the tortellini to 24 ounces. Cook on low for 2-3 hours, or until the tortellini are tender. Add a can of drained artichoke hearts for extra texture.
- Spicy: Add 1/2 teaspoon red pepper flakes and 1/4 teaspoon cayenne pepper to the Alfredo sauce before pouring over the ingredients. Top with fresh jalapeño slices before serving.
- Extra Veggies: Add 1 cup of chopped spinach or kale along with the mushrooms. You can also include roasted red peppers or sun-dried tomatoes for a burst of color and flavor.
- Different Cheese: Replace the provolone with shredded mozzarella or a blend of Italian cheeses. For a sharper flavor, use aged provolone or add 1/2 cup grated Parmesan to the sauce.
Storage and make-ahead

- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently in the microwave or on the stovetop over medium-low heat, stirring occasionally, until heated through.

This dish can be assembled up to 24 hours in advance. Layer all the ingredients in the slow cooker insert, cover, and refrigerate.
When ready to cook, place the insert in the slow cooker and cook on low for 4 hours, adding about 30 minutes to the cook time if starting from cold. Alternatively, cook the full dish and refrigerate for up to 3 days.
Serving ideas
Serve this creamy chicken tortellini straight from the slow cooker for a casual family dinner, or plate it onto individual dishes for a more formal presentation.
A side of crusty bread or a simple green salad with lemon vinaigrette balances the richness. For extra indulgence, top with additional shredded provolone or a sprinkle of red pepper flakes.
This dish pairs well with steamed broccoli or roasted asparagus to add a fresh, green element. For a complete meal, serve alongside garlic bread or a light Caesar salad. The creamy sauce also works well over cooked pasta or polenta, making it a versatile base for other meals.

Crockpot Chicken Spinach Tortellini Alfredo

Ingredients
- 2 lb boneless skinless chicken breasts, cut into bite-sized cubes
- 20 oz refrigerated spinach-and-cheese tortellini
- 8 oz cremini mushrooms, sliced
- 1 1/2 cups jarred Alfredo sauce
- 1 cup whole-milk ricotta cheese
- 2 cups shredded provolone cheese
Instructions
- Place the cubed chicken breast pieces in an even layer at the bottom of a 6-quart slow cooker. Scatter the spinach tortellini and sliced cremini mushrooms over the chicken. Pour the Alfredo sauce evenly over the top, making sure to cover the tortellini and mushrooms as much as possible.
- Spoon dollops of the whole-milk ricotta cheese over the top of the mixture. Sprinkle the shredded provolone cheese evenly over everything, covering the surface completely.
- Cover the slow cooker with its lid and cook on low for 4 hours, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C) and the tortellini is tender. Do not lift the lid during the first 3 hours of cooking to maintain even heat.
- Turn off the slow cooker and let the dish rest, uncovered, for 5 minutes. This allows the sauce to thicken slightly. Serve directly from the slow cooker onto plates, using a large spoon to scoop up the chicken, tortellini, and creamy sauce.
