Tips for success

For the creamiest result, use full-fat Alfredo sauce and a good-quality cheese blend. Grate the Parmesan yourself for better melting and flavor.

If you prefer a spicy kick, add a pinch of red pepper flakes when layering the ingredients. The pasta will absorb some sauce as it cooks, so don't be alarmed if it looks saucy at first.

To make this dish even easier, prep the chicken and broccoli the night before and store them in the refrigerator.

You can also assemble the entire slow cooker insert the night before and refrigerate it, then start cooking in the morning. Just add 30 minutes to the cooking time if starting from cold.

Variations

  • Add Mushrooms: Add 8 oz sliced mushrooms along with the broccoli. The mushrooms will release moisture and add an earthy flavor. No other changes needed.
  • Spicy Alfredo: Add 1/2 teaspoon red pepper flakes and a dash of hot sauce to the Alfredo sauce before pouring. This adds a subtle heat that pairs well with the creamy cheese.
  • Use Chicken Thighs: Substitute boneless skinless chicken thighs for breasts. Thighs stay moist and tender in the slow cooker. Cut into cubes and cook for the same amount of time.
  • Gluten-Free Option: Use gluten-free penne pasta and ensure the Alfredo sauce is gluten-free. Cook time may be slightly shorter; check pasta tenderness at 2.5 hours.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days.
Freezer
Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat individual portions in the microwave for 1-2 minutes, stirring halfway.

Store leftovers in an airtight container in the refrigerator for up to 3 days. The pasta will continue to absorb sauce, so you may want to add a splash of milk or chicken broth when reheating to restore creaminess.

This recipe is perfect for meal prep. Assemble the slow cooker insert the night before, cover, and refrigerate.

In the morning, place the insert in the slow cooker and cook on LOW as directed. If starting from cold, add 30 minutes to the cooking time.

Serving ideas

Serve this chicken Alfredo penne hot, straight from the slow cooker. It pairs well with a simple green salad and crusty bread to soak up the extra sauce.

For a complete meal, add a side of roasted vegetables or garlic bread. The dish is rich and satisfying on its own.

Garnish with extra grated Parmesan and cracked black pepper for a finishing touch. You can also top with chopped fresh parsley for a pop of color. This dish is best enjoyed immediately, but leftovers make a great lunch the next day.

Frequently asked questions

Can this recipe be made with frozen chicken?
It is not recommended to use frozen chicken in a slow cooker, as it may not cook evenly and can stay in the danger zone too long. Always thaw chicken in the refrigerator before adding it to the slow cooker.
Why does the pasta sometimes turn mushy?
Overcooking is the main culprit. Stick to the recommended 3 to 4 hours on LOW and avoid stirring during cooking. The pasta absorbs liquid as it cooks, so it should be tender but still hold its shape. If your slow cooker runs hot, check at the 2.5-hour mark.
Can this dish be made ahead and reheated?
Yes, the dish can be made ahead and refrigerated for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of milk or chicken broth to loosen the sauce, as the pasta will absorb liquid over time.
What can be used instead of Alfredo sauce?
A homemade Alfredo sauce made with butter, heavy cream, garlic, and Parmesan works well. You can also use a creamy garlic parmesan sauce from a jar. Avoid using a thin marinara or broth, as it will not provide the same creamy texture.
Is it necessary to brown the chicken first?
No, browning is not necessary. The chicken cooks gently in the slow cooker and stays tender. If you prefer a browned flavor, you can sear the cubes in a skillet before adding them, but this adds extra time and is optional.

Crockpot Chicken Alfredo Penne: Dump-and-Go Dinner

Crockpot Chicken Alfredo Penne with melted cheese and tender pasta, served in a bowl

Ingredients

  • 2 lb boneless skinless chicken breasts, cut into bite-sized cubes
  • 1 lb penne pasta
  • 3 cups fresh broccoli florets
  • 1 jar (15 oz) creamy garlic parmesan Alfredo sauce
  • 2 cups shredded Italian four-cheese blend
  • 1/2 cup freshly grated Parmigiano-Reggiano

Instructions

  1. Place the cubed chicken breasts in an even layer at the bottom of the slow cooker. Sprinkle the penne pasta and broccoli florets over the chicken. Pour the Alfredo sauce over everything, making sure the pasta and chicken are mostly coated. Do not stir yet.
  2. Sprinkle the shredded Italian four-cheese blend evenly over the top of the mixture. Then sprinkle the grated Parmigiano-Reggiano over the cheese blend. Do not stir; the cheese will melt and create a golden crust as it cooks.
  3. Cover the slow cooker with the lid and set it to LOW. Cook for 3 to 4 hours, until the chicken is cooked through and the pasta is tender. Avoid lifting the lid during the first 2 hours to keep the heat inside.
  4. After 3 hours, carefully remove the lid and check the internal temperature of the chicken with an instant-read thermometer. It should read at least 165°F (74°C). If not, cover and continue cooking for another 30 minutes, then check again.
  5. Once the chicken is done, gently stir the entire mixture to combine the melted cheese and sauce. Let it rest for 5 minutes before serving. This allows the sauce to thicken slightly and the flavors to meld.
  6. Spoon the chicken Alfredo penne onto plates or into bowls. Serve immediately, making sure each serving gets a good amount of chicken, pasta, and broccoli with plenty of sauce.
