Tips for success

For the best flavor, use a good-quality salsa with a robust kick. The salsa adds acidity and heat, which balances the richness of the cheese and pork.

If you prefer a milder dish, choose a mild salsa, or add a pinch of cayenne for more heat.

This recipe is very forgiving — you can add extra beans, use a different cheese, or swap the pork for chicken thighs. Just adjust the cooking time accordingly. The sauce is also excellent over nachos or as a filling for burritos.

Variations

  • Chicken Taco Bowl: Substitute 3 pounds of boneless, skinless chicken thighs for the pork. Reduce the cook time to 6 to 7 hours on LOW. Shred the chicken and proceed with the same creamy sauce.
  • Spicy Chipotle Version: Add 2 chipotle peppers in adobo sauce, minced, along with the salsa. Increase the taco seasoning to 1 1/2 ounces for extra heat. Serve with a drizzle of crema and pickled onions.
  • Vegetarian Bean and Cheese: Omit the pork and use 3 cans of pinto beans (45 ounces total) and 2 cups of vegetable broth. Cook on LOW for 4 hours, then stir in the cream cheese and cheddar until melted. Serve over rice.
  • Breakfast Hash: Use the leftover carnitas to make a breakfast hash. Sauté diced potatoes in a skillet until golden, add the carnitas and a splash of the sauce, and cook until heated through. Top with fried eggs.

Storage and make-ahead

Fridge

Freezer

Reheat
Reheat in a saucepan over medium heat, stirring occasionally, until hot and bubbly. Add a little water or broth if the sauce has thickened too much.

Store leftover carnitas in an airtight container in the refrigerator for up to 4 days. The sauce will thicken when chilled; reheat gently with a splash of water or broth to loosen it.

This dish is perfect for making ahead. Prepare the ingredients the night before, place them in the slow cooker insert, and refrigerate.

In the morning, place the insert in the slow cooker and cook as directed. You may need to add 30 minutes to the cook time if starting from cold.

Serving ideas

Serve the carnitas over fluffy cilantro-lime rice, with warm corn or flour tortillas on the side.

The creamy sauce soaks into the rice, making every bite rich and satisfying. Add a squeeze of fresh lime and a sprinkle of cilantro for brightness.

For a lighter option, serve the carnitas on a bed of shredded lettuce or in lettuce cups.

Top with diced tomatoes, avocado, or a dollop of sour cream. The dish is also delicious as a filling for quesadillas or stuffed into baked potatoes.

Frequently asked questions

Can this recipe be made with chicken instead of pork?
Yes, boneless, skinless chicken thighs are a great substitute. Use the same amount (3 pounds) and cook on LOW for 6 to 7 hours, or until the chicken shreds easily. Ensure the internal temperature reaches 165°F (74°C) before serving.
Why does the sauce sometimes turn out thin?
If the sauce is thin, it may be because the salsa had a high water content or the slow cooker was left uncovered. To thicken, remove the lid and cook on HIGH for 15 to 20 minutes, or stir in a slurry of 1 tablespoon cornstarch and 2 tablespoons water.
Can this be frozen?
Yes, this recipe freezes well. Let it cool completely, then transfer to a freezer-safe container. It can be frozen for up to 3 months. Thaw overnight in the refrigerator and reheat on the stovetop or in the microwave.
What can be used instead of cream cheese?
For a similar creamy texture, use mascarpone or a dairy-free cream cheese alternative. If avoiding dairy, a can of coconut cream can be used, though it will change the flavor slightly. Greek yogurt can be added at the end, but may curdle if boiled.
How should leftovers be reheated?
Reheat leftovers in a saucepan over medium heat, stirring occasionally, until hot and bubbly. Add a splash of water or broth if the sauce has thickened too much. The microwave also works well for individual portions.

Crockpot Cheddar Taco Pork Carnitas: Dump-and-Go

Crockpot full of creamy cheddar taco pork carnitas with pinto beans and melted cheese sauce

Ingredients

  • 3 lb pork shoulder, cut into 2-inch chunks
  • 1 oz taco seasoning mix
  • 15 oz canned pinto beans, drained and rinsed
  • 1 cup chunky salsa
  • 8 oz cream cheese, softened and cut into cubes
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. Place the pork shoulder chunks in the bottom of a 6-quart or larger slow cooker. Sprinkle the taco seasoning over the pork and toss to coat evenly. Scatter the drained pinto beans over the meat, then pour the salsa over the top, spreading it into an even layer.
  2. Place the cubed cream cheese in the center of the slow cooker, pushing it slightly into the mixture. Sprinkle the shredded sharp cheddar cheese evenly over the top. Do not stir — the cheese will melt and blend during cooking.
  3. Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the pork is fork-tender and easily shreds. Do not open the lid during the first 6 hours on LOW or 4 hours on HIGH to keep the heat steady. Let it rest for 3 minutes before slicing.
  4. Remove the pork chunks from the slow cooker and place them on a cutting board. Using two forks, shred the pork into bite-size pieces. Return the shredded pork to the slow cooker and stir everything together until the cream cheese and cheddar are fully melted and the sauce is smooth and creamy. Let it rest for 3 minutes before slicing.
  5. Let the shredded pork rest in the sauce for at least 3 minutes before serving. This allows the meat to reabsorb some of the juices and the flavors to meld. Keep the slow cooker on WARM while serving.
  6. Serve the cheddar taco pork carnitas over cilantro-lime rice, in warm tortillas, or on a salad. Top with fresh cilantro, diced onions, or a squeeze of lime if desired. The creamy, cheesy sauce is the star — spoon it generously over each serving.
