Tips for success
For the best texture, shred the chicken right in the slow cooker while the sauce is hot. This allows the shreds to absorb some of the sauce and stay moist.
If you prefer larger chunks of chicken, use a fork to break it into big pieces instead of fine shreds. The sauce will thicken slightly as it sits, so if you like a looser sauce, you can add a splash of chicken broth or water when reheating.
This recipe is incredibly versatile. Serve it over rice, quinoa, or cauliflower rice for a low-carb option. It's also delicious in tacos, burritos, or as a topping for nachos.
For a crunchy contrast, serve with tortilla chips and a dollop of sour cream or guacamole. If you like extra heat, add a minced jalapeño or a dash of hot sauce before serving.
Variations
- Spicy Chipotle: Add 1-2 chipotle peppers in adobo sauce, minced, along with the salsa. For extra heat, use pepper jack cheese instead of cheddar. Serve with cool sour cream to balance the spice.
- Green Salsa Version: Swap the red salsa for green tomatillo salsa and use Monterey Jack cheese instead of cheddar. The tangy, herbal flavor of green salsa pairs beautifully with the creamy sauce.
- Black Bean & Corn: Replace pinto beans with black beans and add 1 cup frozen corn kernels along with the salsa. The sweet corn adds a pop of color and texture to the dish.
- Smoky Bacon: Cook 4 slices of bacon until crisp, crumble, and stir into the sauce just before serving. The smoky, salty flavor complements the creamy cheese and taco spices.
Storage and make-ahead

- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of water or broth if the sauce has thickened.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in the microwave or on the stovetop over medium heat, stirring occasionally, until hot and bubbly.
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or on the stovetop, adding a splash of water or broth to loosen the sauce if needed. The flavors will continue to meld overnight, making the leftovers even more delicious.
This dish can be assembled up to 24 hours in advance. Layer all the ingredients in the slow cooker insert, cover, and refrigerate. When ready to cook, place the insert in the slow cooker and cook on low for 4 to 5 hours, or on high for 2 1/2 to 3 hours. You may need to add 30 minutes to the cooking time if starting from cold.
Serving ideas
Serve the cheddar taco chicken over fluffy white rice or cilantro-lime rice for a complete meal. The creamy sauce is perfect for soaking into the rice, and the beans add heartiness.
For a lighter option, serve over a bed of greens or cauliflower rice. A squeeze of fresh lime juice and a sprinkle of chopped cilantro brighten up the dish and add a fresh contrast to the rich sauce.
This dish also shines as a filling for tacos or burritos. Warm corn or flour tortillas and pile on the chicken, then top with shredded lettuce, diced tomatoes, and a dollop of sour cream.
For a fun party appetizer, serve the chicken with tortilla chips and let everyone scoop it up like a dip. The possibilities are endless, and the leftovers are just as good as the first serving.

Crockpot Cheddar Taco Chicken Thighs: Easy Dump Dinner

Ingredients
- 2 lb boneless skinless chicken thighs
- 1 oz taco seasoning mix (about 2 tbsp)
- 15 oz canned pinto beans, drained and rinsed
- 1 cup chunky salsa
- 8 oz cream cheese, softened and cut into cubes
- 2 cups shredded sharp cheddar cheese
Instructions
- Place the chicken thighs in an even layer in the bottom of a 6-quart or larger slow cooker. Sprinkle the taco seasoning over the chicken, turning the pieces to coat them evenly. Spoon the drained pinto beans over the chicken, then pour the salsa over the beans, spreading it gently to cover most of the surface.
- Place the cubed cream cheese in the center of the slow cooker, then scatter the shredded cheddar over the top. Do not stir. Cover the slow cooker with the lid.
- Cook on LOW for 4 to 5 hours, or on HIGH for 2 1/2 to 3 hours, until the chicken is tender and easily shreds with a fork. The cheese should be fully melted and the sauce bubbling around the edges.
- Using two forks, shred the chicken thighs directly in the slow cooker. Stir the shredded chicken into the sauce until everything is well coated. If the sauce seems thin, let it cook uncovered for 10 to 15 minutes to thicken.
- Spoon the chicken mixture over warm cilantro-lime rice or your favorite grain. Garnish with fresh cilantro, diced avocado, or a squeeze of lime, if desired.
