Before you start

Before you start, cube the beef if it isn't already. Dice the mango and chop the cilantro. Soften the cream cheese at room temperature for about 30 minutes.

Measure out the salsa and shredded cheddar. You'll also want to have a 6-quart slow cooker ready. No other prep is needed; this recipe is truly dump-and-go.

Ingredients at a glance (6)
  • 2 1/2 lb beef chuck cubes
  • 2 cups diced mango
  • 1 cup habanero lime salsa
  • 1/2 cup chopped fresh cilantro
  • 8 oz cream cheese, softened
  • 2 cups shredded sharp cheddar cheese

Instructions

Layer Everything in the Crockpot

  1. Layer the Ingredients
Place the beef chuck cubes in the bottom of a 6-quart slow cooker. Scatter the diced mango, habanero lime salsa, and chopped cilantro over the beef. Place the block of cream cheese in the center of the mixture, then sprinkle the shredded sharp cheddar on top.
Look for The beef is covered with a colorful layer of mango, salsa, cilantro, and cheese.
Tip No need to stir; the slow cooker will do the work.
  2. Cook on Low
Cover the slow cooker and cook on low heat for 8 hours, or on high heat for 4-5 hours, until the beef is fork-tender and shreds easily. The cheese will melt into a creamy sauce as it cooks. Let it rest for 3 minutes before slicing.
Look for The mixture is bubbling gently around the edges and the beef is tender enough to pull apart.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Resist the urge to lift the lid; each peek adds 20 minutes of cook time.

You'll see a colorful layer of raw beef, bright mango, salsa, and herbs, with a block of cream cheese and a blanket of shredded cheddar on top. The cream cheese is still solid, and the cheddar is in a neat pile. The aroma is fresh and spicy from the salsa and cilantro.

Slow-Cook Until Tender

  1. Shred the Beef
Once the beef is tender, remove it from the slow cooker to a cutting board. Use two forks to shred the meat into bite-sized pieces. Return the shredded beef to the slow cooker and stir it into the sauce. Let it rest for 3 minutes before slicing.
Look for The beef shreds easily and is moist and tender.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip If the sauce seems too thin, let it cook uncovered for 10-15 minutes to thicken.

After hours on low, the sauce is bubbling gently, the cheese has melted into a creamy orange-gold liquid, and the beef is fork-tender.

The kitchen smells sweet, spicy, and savory. The beef should shred easily with two forks, and the sauce should be thick enough to coat a spoon.

Shred, Rest, and Serve

  1. Finish and Serve
Let the shredded beef rest in the sauce for at least 3 minutes before serving. Serve over cilantro-lime rice, if desired, with extra cilantro on top.
Look for The beef is coated in a creamy, golden sauce with visible mango pieces.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip For a spicier kick, add extra habanero salsa or a pinch of cayenne.

The shredded beef is glossy with sauce, with visible bits of mango and cilantro. The sauce is creamy and clings to the meat. When you lift a spoonful, it's steaming and aromatic. The beef is tender and juicy, and the sauce has a balanced sweet-heat flavor.

Common mistakes

A common mistake is lifting the lid too often, which lets heat escape and extends cooking time. Another is using lean beef, which can dry out; stick with well-marbled chuck.

If the sauce is too thin at the end, remove the lid and cook on high for 15-20 minutes to reduce. Don't skip the resting time after shredding — it keeps the beef moist.

How to tell it’s done

The beef is done when it's fork-tender and shreds easily. The internal temperature should reach at least 145°F (63°C) for whole cuts of beef. The sauce will be bubbling and slightly thickened, with melted cheese fully incorporated.

If you cook on low for 8 hours, the beef should be perfect; if you cook on high, check at 4 hours. Always let the beef rest for at least 3 minutes after shredding to allow the juices to redistribute.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
