Tips for success
For the best flavor, use a high-quality red enchilada sauce. You can also make your own, but a good store-bought brand works well.
If you prefer a spicier dish, choose a hot enchilada sauce or add a pinch of cayenne pepper. The cream cheese adds richness, so don't skip it—it's what makes the sauce so luscious.
This recipe is incredibly versatile. Serve the chicken and sauce over rice, in tacos, or as a filling for enchiladas.
You can also top with fresh cilantro, diced avocado, or a squeeze of lime for brightness. Leftovers can be stored in the refrigerator and taste even better the next day as the flavors meld.
Variations
- Spicy Version: Add 1-2 diced jalapeños or a teaspoon of chipotle powder to the slow cooker along with the other ingredients. Use hot enchilada sauce for an extra kick. Top with fresh cilantro and a squeeze of lime to balance the heat.
- Vegetarian Option: Replace the chicken with 2 cans of drained and rinsed black beans or pinto beans. Omit the chicken thighs and increase the beans to 3 cans. Cook on low for 4-5 hours, then stir and serve. The cream cheese and cheddar still create a rich, creamy sauce.
- Green Enchilada Version: Swap the red enchilada sauce for green enchilada sauce. The flavor will be milder and tangier with a hint of tomatillo. Proceed with the same steps. Garnish with fresh cilantro and a dollop of sour cream.
- Extra Cheesy Version: Add an extra 1/2 cup of shredded cheddar or a Mexican cheese blend on top during the last 15 minutes of cooking. Let it melt before serving. This adds a golden, bubbly cheese crust to the dish.
Storage and make-ahead
- Fridge
- Store in an airtight container in the fridge for up to 4 days.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Alternatively, microwave in 30-second bursts, stirring between intervals.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce may thicken upon cooling; add a splash of chicken broth or water when reheating to loosen it. Reheat gently in the microwave or on the stovetop until heated through.
You can assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook on low as directed. This makes it even easier to have dinner ready with minimal effort on busy days.
Serving ideas
Serve the cheddar enchilada chicken thighs over fluffy white rice, cilantro-lime rice, or with warm flour tortillas.
A side of Mexican street corn or a simple green salad rounds out the meal. Garnish with fresh cilantro, diced avocado, or a dollop of sour cream for extra creaminess.
This dish also works well as a filling for tacos, burritos, or quesadillas. The creamy, saucy chicken is incredibly versatile. For a low-carb option, serve over cauliflower rice or with a side of roasted vegetables. Leftovers make a great lunch the next day.

Crockpot Cheddar Enchilada Chicken Thighs

Ingredients
- 6 boneless skinless chicken thighs
- 1 1/2 cups red enchilada sauce
- 1 can (15 oz) drained pinto beans
- 8 oz cream cheese
- 2 cups shredded sharp cheddar cheese
Instructions
- Place the chicken thighs in the bottom of a 6-quart slow cooker in a single layer. Pour the red enchilada sauce over the chicken, then add the drained pinto beans. Place the block of cream cheese in the center of the mixture, then sprinkle the shredded sharp cheddar over the top.
- Cover the slow cooker and cook on low for 6 hours, or until the chicken is tender and reaches an internal temperature of 165°F (74°C). The cream cheese will soften and melt into the sauce.
- Once the chicken is cooked through, stir everything gently to combine the melted cream cheese and cheddar into the sauce, creating a creamy, velvety gravy. The chicken will shred easily with a spoon.
- Serve the chicken and sauce over cilantro-lime rice or with warm tortillas. Garnish with fresh cilantro, if desired.
