Tips for success
For the best texture, let the pork rest for at least 3 minutes after cooking before shredding. This allows the juices to redistribute, keeping the meat moist.
If you have time, shred the pork and let it sit in the sauce for 30 minutes before serving—this lets the flavors meld even more.
This dish is incredibly versatile. Serve it over cilantro-lime rice, pile it into warm tortillas with pickled onions, or stuff it into baked potatoes.
The sauce is rich, so a squeeze of fresh lime juice or a sprinkle of cilantro brightens it up. Leftovers are even better the next day as the flavors deepen.
Variations
- Mild Version: For those who prefer less heat, use only 1 tablespoon of adobo sauce from the chipotle can, omitting the minced peppers. The pork will still have a subtle smoky flavor without the spicy kick.
- Pineapple Salsa Topping: Before serving, stir together 1 cup of fresh pineapple chunks, 1/4 cup of chopped red onion, 2 tablespoons of chopped cilantro, and a squeeze of lime. Spoon this salsa over the carnitas for a bright, fresh contrast.
- Taco Style: Serve the shredded pork in warm corn tortillas with a drizzle of the creamy sauce, plus shredded cabbage, sliced radishes, and crumbled cotija cheese. This turns the dish into a fantastic taco night favorite.
- Spicy Chipotle: Add an extra tablespoon of chipotle peppers and a diced jalapeño with the seeds for a fiery version. The sweetness of the pineapple and the richness of the cheese will help balance the heat.
Storage and make-ahead
- Fridge
- Store in an airtight container in the fridge for up to 4 days.
- Freezer
- Freeze the shredded pork with sauce in a freezer-safe container for up to 3 months. Thaw overnight in the fridge and reheat gently.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until heated through (165°F/74°C). Add a little broth or water if needed to loosen the sauce.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The pork will absorb more sauce as it sits, so you may want to add a splash of broth or water when reheating to loosen it up.
You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed. Alternatively, cook the full recipe and freeze the shredded pork in the sauce for up to 3 months.
Serving ideas
Serve this carnitas over fluffy white rice or cilantro-lime rice to soak up the creamy sauce. It also works beautifully in warm corn or flour tortillas, topped with diced red onion, fresh cilantro, and a squeeze of lime.
For a low-effort meal, spoon it straight from the Crockpot into bowls and top with extra cheese.
This dish is hearty enough to stand alone, but a simple side salad or grilled vegetables would round it out. For a crowd, set up a taco bar with all the fixings—shredded lettuce, pico de gallo, avocado, and hot sauce. The sweet-spicy pork is sure to be the star of any table.

Crockpot Cheddar Chipotle Pineapple Pork Carnitas

Ingredients
- 3 lb pork shoulder, cut into chunks
- 1 cup pineapple tidbits, drained
- 2 tbsp chipotle peppers in adobo sauce, minced
- 8 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese
Instructions
- Place the pork shoulder chunks in the bottom of a 6-quart slow cooker. Add the drained pineapple tidbits and the minced chipotle peppers in adobo, spreading them over the pork. Place the softened cream cheese block in the center of the mixture, then scatter the shredded sharp cheddar cheese over the top.
- Cover the slow cooker and cook on low for 8 hours, or on high for 4 to 5 hours, until the pork is fork-tender and easily shreds. The internal temperature of the pork should reach at least 145°F (63°C) for safety, but it will be much higher after this long cook. Let it rest for 3 minutes before slicing.
- Once the pork is cooked, remove it from the slow cooker to a cutting board. Let it rest for at least 3 minutes, then shred it with two forks. Return the shredded pork to the slow cooker and stir it into the sauce. Serve warm over rice, in tacos, or on its own.
