Before you start

Before starting, rinse and drain the black beans, measure the corn and salsa, and cut the cream cheese into cubes so it melts more easily. Soften the cream cheese by leaving it at room temperature for about 30 minutes.

Make sure the slow cooker is clean and ready. No need to preheat anything — just layer the ingredients in the order given. If serving with rice, start it before the chicken is done so it's ready when you are.

Ingredients at a glance (7)
  • 3 boneless skinless chicken breasts
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup fire-roasted corn kernels
  • 2 cups chunky roasted red tomato salsa
  • 8 oz cream cheese, softened and cut into cubes
  • 1 1/2 cups shredded sharp cheddar cheese
  • cilantro-lime rice, for serving

Instructions

Layer and Go

  1. Layer the Ingredients
Place the chicken breasts in the bottom of a 6-quart slow cooker in a single layer. Pour the rinsed black beans, fire-roasted corn, and chunky salsa over the chicken, spreading them evenly. Do not stir.
Look for The chicken is nestled under the beans, corn, and salsa.
Tip Rinsing the beans removes excess sodium and gives a cleaner flavor.
  2. Add the Cheeses
Place the cream cheese cubes in the center of the slow cooker, then sprinkle the shredded cheddar over the top. Cover with the lid.
Look for The cream cheese sits like a dollop in the middle, with cheddar scattered over.
Tip Soften the cream cheese beforehand so it melts more smoothly.

The slow cooker is filled with chicken breasts at the bottom, topped with black beans, corn, salsa, and the cheeses. The ingredients are colorful and raw, with the cream cheese sitting in the center like a white island. The lid is on, and the slow cooker is set to LOW. Everything is ready to cook.

Slow Cook and Shred

  1. Slow Cook
Cook on LOW for 4 hours, or until the chicken reaches an internal temperature of 165°F (74°C). Do not open the lid during cooking.
Look for The sauce is bubbling at the edges and the chicken is tender.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Resist the urge to peek — every time the lid lifts, heat escapes and cooking time increases.
  2. Shred the Chicken
Turn off the slow cooker. Using two forks, shred the chicken directly in the pot. Stir everything together until the chicken is coated in the creamy sauce and the cream cheese is fully melted.
Look for The sauce turns a uniform golden-orange and the chicken shreds easily.
Tip For chunkier shreds, use a potato masher instead of forks.

After 4 hours, the kitchen smells of salsa and cheese. The sauce is bubbling at the edges, and the chicken is tender enough to shred with two forks.

The cream cheese has melted into the sauce, which now has a smooth, golden-orange color. The chicken shreds easily and is fully coated in the creamy mixture.

Serve Over Rice

  1. Serve
Spoon the fiesta chicken over warm cilantro-lime rice on plates. Serve immediately.
Look for Steam rises from the creamy, cheesy chicken as it's spooned over rice.
Tip Warm the rice just before serving so it contrasts with the hot chicken.

The fiesta chicken is spooned over warm cilantro-lime rice on a white plate. The sauce is thick and creamy, with bits of black beans, corn, and shredded chicken visible. Steam rises from the dish, and the colors are vibrant — golden sauce, white rice, and green cilantro. It looks ready to eat.

Common mistakes

One common mistake is opening the slow cooker lid to check on the food, which releases heat and extends cooking time. Another is using cold cream cheese, which can result in lumps instead of a smooth sauce.

Also, be sure to rinse the black beans — the starchy liquid can make the sauce cloudy and overly salty. Finally, don't shred the chicken too early; it should be fully cooked and tender before you begin.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) as measured with an instant-read thermometer inserted into the thickest part. The sauce should be bubbling gently around the edges, and the chicken should be fork-tender, shredding easily without resistance.

The cream cheese should be fully melted and incorporated into the sauce, which will look creamy and slightly thickened. If the sauce seems too thin, let it cook uncovered for an additional 15-20 minutes.

  • Poultry: 165°F (74°C) in the thickest part
