Before you start
Before you start, drain and rinse the black beans and measure the corn and salsa. Cut the cream cheese into a few large pieces if you like, though it will melt whole. Have the shredded cheddar ready.
No need to preheat anything or brown the chicken—this is a true dump-and-go meal. If you plan to serve it over rice, start that before you serve, or use pre-cooked rice. The slow cooker does the rest.
Ingredients at a glance (7)
- 2 lb boneless skinless chicken thighs
- 15 oz canned black beans, drained and rinsed
- 1 cup frozen fire-roasted corn kernels
- 1 1/2 cups chunky roasted red tomato salsa
- 8 oz block cream cheese
- 1 1/2 cups shredded sharp cheddar cheese
- cilantro-lime rice, for serving
Instructions
Layer and Go
- Layer the Chicken and VegetablesPlace the chicken thighs in an even layer in the bottom of the slow cooker. Top with the drained black beans, the fire-roasted corn, and the salsa, spreading them evenly over the chicken.Look for The chicken is covered with beans, corn, and salsa, leaving no dry spots.Safe temperature 165°F (74°C) internal temperature (poultry)Tip Arrange the chicken in a single layer so it cooks evenly and absorbs the sauce.
- Add the Cream Cheese and CheddarPlace the block of cream cheese in the center of the slow cooker on top of the salsa mixture. Scatter the shredded cheddar cheese over the top. Do not stir.Look for The cream cheese sits whole in the middle, with cheddar scattered over everything.Tip Leaving the cream cheese whole lets it melt slowly and create a smooth sauce.
At the end of this phase, you have a slow cooker filled with raw chicken thighs, beans, corn, salsa, and cheese. The cream cheese block sits in the center, and the cheddar is scattered on top. It looks like a colorful, chunky mixture, and the aromas of salsa and cheese are already inviting. No need to stir; just cover and set the timer.
Slow Cook to Tender
- Cook on LowCover the slow cooker and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours, until the chicken is tender and reaches 165°F (74°C) in the thickest part. The cream cheese should be fully melted.Look for The sauce is bubbling gently around the edges, and the cheese has melted into a creamy sauce.Safe temperature 165°F (74°C) internal temperature (poultry)Tip Check the temperature at the thickest part of a thigh with an instant-read thermometer.
- Stir to CombineOnce the chicken is cooked through, gently stir the sauce to incorporate the melted cream cheese and cheddar into the salsa, beans, and corn. The sauce should be smooth and creamy.Look for The sauce turns a uniform orange color, with no visible lumps of cream cheese.Tip Stir gently to keep the chicken thighs intact; they will be very tender.
After a few hours, the slow cooker is bubbling gently, and the kitchen smells of roasted salsa and melted cheese. The chicken is tender and easily pulls apart with a fork, and the cream cheese has melted into the sauce.
The sauce is a smooth, creamy orange color, with beans and corn distributed throughout. The chicken should register 165°F (74°C).
Stir and Serve
- Serve Over RiceSpoon the chicken and sauce over warm cilantro-lime rice on individual plates or a serving platter. Serve hot.Look for The creamy chicken and sauce sit atop fluffy rice, ready to eat.Tip Use a slotted spoon for a less saucy serving, or ladle extra sauce over the rice.
Once you stir, the sauce is uniform and velvety, coating the chicken and beans. The cheddar is fully incorporated, giving the sauce a rich golden hue. Spooned over rice, the dish looks hearty and comforting, with tender chicken and colorful beans and corn in every bite. The steam rises, and the aroma is irresistible. Serve immediately.
Common mistakes
A common mistake is lifting the lid too often to check on the food, which releases heat and extends the cooking time. Resist the urge. Another is using low-fat cream cheese, which can break or curdle; stick with full-fat.
Also, don't skip stirring at the end—it's essential for a smooth, emulsified sauce. Finally, if you use chicken breasts instead of thighs, check them earlier to avoid overcooking.
How to tell it’s done
The chicken is done when it reaches 165°F (74°C) in the thickest part and shreds easily with a fork. The sauce should be bubbling gently around the edges, and the cream cheese and cheddar should be fully melted and smooth when stirred.
If the sauce seems too thin, let it cook uncovered on HIGH for 15 to 20 minutes to thicken. If it's too thick, stir in a splash of chicken broth or water.
- Poultry: 165°F (74°C) in the thickest part
