Tips for success
For the best flavor, use a sharp cheddar and let it melt slowly. The longer the dish cooks, the more the flavors meld.
If you prefer a thicker sauce, stir in a tablespoon of cornstarch mixed with water during the last 15 minutes of cooking. This will give the sauce a more luxurious body without changing the taste.
To keep the asparagus from becoming too soft, cut the spears into 2-inch pieces—they'll cook more evenly. If you like a bit of heat, add a pinch of red pepper flakes or a dash of hot sauce before serving.
For a golden, bubbly top, you can transfer the cooked mixture to a baking dish, sprinkle with extra cheese, and broil for 2-3 minutes.
Variations
- Mushroom and Swiss: Replace the cream of celery soup with cream of mushroom and swap the cheddar for Swiss cheese. Add 1 cup of sliced mushrooms with the asparagus for an earthy twist.
- Spicy Southwest: Use pepper jack cheese instead of cheddar and stir in a can of diced green chiles. Serve with tortilla chips or over cilantro-lime rice for a Tex-Mex flair.
- Bacon Ranch: Stir in 1/2 cup of cooked, crumbled bacon and 1 packet of ranch seasoning mix along with the soup. Use Colby Jack cheese for a creamy, smoky flavor.
- Broccoli Cheddar: Swap the asparagus for 1 pound of broccoli florets. Use cream of broccoli soup instead of celery and add an extra 1/2 cup of cheddar for a classic pairing.
Storage and make-ahead
- Fridge
- Store in an airtight container in the fridge for up to 4 days. Reheat gently, adding a splash of broth if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbly. Or microwave in 1-minute intervals, stirring between.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; reheat gently on the stovetop or in the microwave, adding a splash of chicken broth or water to loosen it if needed.
You can assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on LOW as directed. You may need to add 30 minutes to the cooking time to account for the cold start.
Serving ideas
Serve this dish over steamed jasmine rice to soak up the velvety sauce. The rice's mild fragrance complements the creamy cheddar and celery notes without overpowering them.
For a low-carb option, spoon the chicken and asparagus over cauliflower rice or enjoy it on its own with a side salad.
A crisp green salad with a light vinaigrette cuts through the richness of the cheese sauce nicely.
Crusty bread or dinner rolls are also excellent for mopping up every last bit of sauce. The dish is hearty enough to stand alone, but these sides round it out into a complete meal.

Crockpot Cheddar Asparagus Chicken Thighs: 5-Ingredient Dump Dinner

Ingredients
- 2 lb boneless skinless chicken thighs
- 1 lb fresh asparagus, trimmed
- 1 can (10.5 oz) condensed cream of celery soup
- 2 cups shredded sharp cheddar cheese
- 2 tbsp butter, cut into small pieces
Instructions
- Place the chicken thighs in an even layer across the bottom of a 6-quart slow cooker. Scatter the trimmed asparagus spears over the chicken. Spoon the condensed cream of celery soup over the top, spreading it gently to cover the ingredients. Sprinkle the shredded sharp cheddar cheese evenly over the soup, then dot with the butter pieces.
- Cover the slow cooker with the lid. Cook on LOW for 4 hours, or until the chicken is cooked through and tender. Do not open the lid during cooking to maintain heat and moisture.
- Once the chicken is fully cooked, use two forks to shred the thighs directly in the slow cooker. Stir gently to coat the shredded chicken and asparagus with the cheddar sauce. Let the mixture rest for 5 minutes so the sauce thickens slightly.
- Spoon the hot chicken and asparagus mixture over steamed jasmine rice on individual plates. Serve immediately, with extra sauce spooned over the top.
