Before you start

Before starting, cut the beef brisket into 1-inch cubes and pat dry with paper towels. Measure the curry paste, bamboo shoots, and cashew cream.

Slice the red bell pepper into strips and cut the butter into small pats. Have all ingredients ready by the slow cooker so you can layer them quickly. No need to brown the meat—the slow cooker will do all the work.

Ingredients at a glance (6)
  • 2 lb beef brisket, cut into 1-inch cubes
  • 3 tbsp Thai red curry paste
  • 1 cup sliced bamboo shoots, drained
  • 1 large red bell pepper, sliced into strips
  • 1 1/2 cups roasted cashew cream
  • 4 tbsp unsalted butter, cut into pats

Instructions

Layer and Cook

  1. Layer the Ingredients
Place the cubed beef brisket in the bottom of the slow cooker. Spoon the Thai red curry paste over the meat, then add the sliced bamboo shoots and red bell pepper strips. Pour the roasted cashew cream over everything and dot with the butter pats. Do not stir.
Look for The ingredients should be layered in the pot, with the sauce and butter on top.
Tip Cut the brisket into uniform 1-inch cubes so they cook evenly.
  2. Cover and Cook
Cover the slow cooker and cook on low for 8 hours, or on high for 4-5 hours, until the beef is fork-tender. The curry will be bubbling gently around the edges and the sauce will have thickened slightly. Let it rest for 3 minutes before slicing.
Look for The sauce should be gently bubbling and the beef easily shreds with a fork.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Resist the urge to open the lid during cooking—each peek releases heat and adds time.
  3. Check the Beef
After the cooking time, check the beef for doneness. It should be fork-tender and easily pull apart. If not, continue cooking in 30-minute increments until done. Let the beef rest for at least 3 minutes before serving.
Look for The beef should offer no resistance when pierced with a fork.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip For extra flavor, let the curry sit on warm for 10 minutes before serving.

At the end of this phase, the slow cooker will be filled with raw ingredients—cubed beef, curry paste, bamboo shoots, peppers, cashew cream, and butter.

The sauce will look a bit separated, but that's fine. As it cooks, the butter will melt and the curry paste will dissolve into the sauce. The aroma will be spicy and inviting.

Serve

  1. Stir and Adjust Seasoning
Gently stir the curry to combine the sauce and ingredients. Taste and adjust seasoning if needed—add a pinch of salt or a little more curry paste for heat. The sauce should be creamy and coat the back of a spoon.
Look for The sauce should be smooth and velvety, with the beef and vegetables evenly coated.
Tip If the sauce seems too thick, stir in a splash of beef broth or water.
  2. Serve with Rice and Naan
Spoon the curry over steamed basmati rice and serve with warm garlic naan on the side. Ladle extra sauce over the top for a rich, comforting bowl.
Look for The rice should be fluffy and the naan warm and soft.
Tip For a low-carb option, serve over cauliflower rice.

The curry should be bubbling gently, with the sauce thickened and glossy. The beef will be fork-tender and easily break apart. The peppers will be soft but still hold their shape. The sauce should be smooth and creamy, with a rich, nutty aroma. Taste and adjust seasoning if needed.

Garnish and Enjoy

  1. Finish with Fresh Herbs (Optional)
If desired, garnish with fresh cilantro or Thai basil before serving. This adds a bright, fresh note to the rich curry.
Look for The herbs should be vibrant and fragrant.
Tip Add the herbs just before serving to keep them fresh.

If adding fresh herbs, they should be bright and fragrant. The final dish should look vibrant and appetizing, with the curry spooned over rice and naan on the side. The beef should be tender and the sauce creamy, with a hint of spice and a buttery finish.

Common mistakes

One common mistake is lifting the lid too often to peek—this releases heat and extends cooking time. Another is cutting the beef too small, which can make it dry out. Be patient and let the slow cooker do its job.

Also, ensure the cashew cream is well-stirred before measuring, as it can separate. Finally, don't skip the rest time after cooking; it allows the juices to redistribute.

How to tell it’s done

The beef is done when it is fork-tender and easily shreds with a fork. The internal temperature should reach at least 145°F (63°C) for food safety, but the meat will be far more tender after the long cook.

The sauce should be slightly thickened and coat the back of a spoon. If the sauce is too thin, remove the lid and cook on high for 30 minutes to reduce.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
