This is the slow cooker dinner that asks almost nothing of you. Six ingredients go into the insert, the lid goes on, and hours later you have tender chicken thighs in a silky, faintly sweet tomato-cashew sauce that tastes like it came from a restaurant.
The method is pure dump-and-go, but the result is rich enough for a special meal. Serve it over steamed basmati rice or with warm naan, and dinner is done.
Makhani, often called butter chicken, gets its signature velvet texture from cream and butter. This version trades the cream for cashew cream, which brings a gentle nuttiness and a body that clings to the chicken without feeling heavy.
The slow cooker does the work: the chicken releases its juices, the spices bloom in the tomato, and the butter melts into the sauce. You simply layer the ingredients in the order the video shows, set the timer, and walk away. When you come back, the house smells like a curry house and the chicken is fork-tender.
Ingredients
- 6 boneless skinless chicken thighs (about 2 lb)
Sauce
- 2 cups spiced tomato puree (see note)
- 2 tbsp fresh ginger, grated
- 4 cloves garlic, minced
- 1 cup cashew cream (see note)
- 4 tbsp butter, cut into pats
- Kosher salt, to taste
Why this recipe works
The slow cooker's low, steady heat turns tough chicken thighs into spoon-tender meat without any browning or stirring. The collagen in the thighs breaks down over hours, leaving the meat moist and pull-apart.
The sauce reduces just enough to concentrate flavors, while the cashew cream stays smooth because it's added at the start and never overheated.
The order of layering matters. Chicken goes on the bottom, where it cooks in the tomato puree and its own juices. The cashew cream and butter sit on top, melting down through the sauce during cooking.
This creates a gentle emulsion that doesn't split, giving you a glossy, restaurant-style sauce without any last-minute whisking.
Notes and substitutions
Spiced tomato puree: Use a good-quality tomato puree or crushed tomatoes and add a teaspoon of garam masala or curry powder. If you have a favorite makhani sauce base, use that. The video calls for 'spiced tomato puree'—make it your own with warm spices like cumin, coriander, and a pinch of cayenne.
Cashew cream: Soak 1 cup raw cashews in boiling water for 30 minutes, drain, and blend with 1/2 cup water until silky. Or buy cashew cream from the refrigerated section. The sauce will be less rich with a thinner cream, so aim for a pourable, thick consistency. Butter: Use unsalted so you control the salt.
- cashew cream: Use 1 cup raw cashews soaked in hot water for 30 minutes, then blended with 1/2 cup water until smooth. Or substitute 1 cup heavy cream for a non-vegan version.
- spiced tomato puree: Combine 2 cups tomato puree with 1 tsp garam masala, 1/2 tsp ground cumin, and 1/2 tsp ground coriander. Or use 1 can (15 oz) crushed tomatoes with 1 tsp curry powder.
- butter: Use ghee or a plant-based butter substitute for a dairy-free option.
- chicken thighs: Substitute boneless skinless chicken breasts, but reduce cooking time to 3 hours on low to avoid drying out.
