Four ingredients, one slow cooker, and a dinner that tastes like game day any night of the week. Turkey tenderloins cook low and slow under a blanket of buffalo sauce and ranch seasoning, then shred into glossy, tangy strands. Pile them onto toasted rolls and the whole pot disappears in minutes.

Buffalo turkey tenderloins are the slow cooker answer to a busy week: the prep takes about ten minutes, and the machine handles everything after that. Tenderloins are the right cut for the job because they are small, uniform and nearly fat-free, so they cook through evenly and pull apart into long, tender strands without any trimming or pounding.

Diced celery goes in first for a quiet savory base, a packet of ranch seasoning adds herbs, garlic and salt in one shake, and a cup of buffalo sauce brings the vinegar heat and the signature orange gloss. By the time the turkey reaches a safe internal temperature, the sauce has mellowed and thickened slightly, and the meat shreds with two forks in under two minutes.

Ingredients

Makes 6 sandwiches · serves 6
  • 1 1/2 lb turkey tenderloins (about 2 pieces)
  • 2 celery stalks, diced
  • 1 oz ranch seasoning mix (1 packet)
  • 1 cup buffalo sauce

For serving

  • 6 sandwich rolls, split and toasted, for serving
Contains: gluten, milk, celery

Why this recipe works

The method works because tenderloins are small enough to cook through gently but substantial enough to stay moist for hours in liquid. Slow cooking gives the connective tissue time to relax, so the meat does not just cook, it surrender-shreds.

The celery is not decoration: as it softens it releases water and subtle flavor, which keeps the sauce from reducing too far and keeps lean turkey from tightening up. Everything cooks in one covered vessel, so nothing dries out on a sheet pan or over a flame.

Layering matters more than it looks here. Ranch seasoning goes on before the sauce, so the dry herbs and salt make direct contact with the meat and dissolve into the juices that build up underneath, seasoning the turkey from all sides.

Pouring the buffalo sauce over the top, rather than stirring it in, keeps the vinegar from sitting only at the bottom and lets it baste the meat as it circulates. The result is turkey that tastes seasoned through, not just coated, with a sauce that clings instead of pooling thin and watery.

Notes and substitutions

Choose tenderloins that are similar in size and weight so they finish at the same time; a 1 1/2 lb package is typical and serves six generously on rolls.

Any standard buffalo sauce works, from cayenne-vinegar style to a thicker bottled version; the sauce is already seasoned, so no extra salt is needed beyond what the ranch packet brings. Use a plain ranch seasoning packet, not a dressing kit that requires buttermilk, to keep the sauce smooth.

A 6-quart oval slow cooker is ideal; smaller models still work as long as the tenderloins fit in one layer. The measuring cup makes pouring clean and keeps the counter tidy. If the sauce tastes sharper than expected after cooking, stir in a teaspoon of butter per cup to round it out, or balance it with an extra pinch of ranch seasoning. Leftover sauce from the pot is excellent for drizzling at the table, so do not discard it.

  • turkey tenderloins: Boneless, skinless chicken breasts or thighs work in the same slow cooker; check the same 165°F internal temperature before shredding.
  • packet ranch seasoning mix: Use 1 tbsp each dried parsley, dried dill, garlic powder and onion powder with 1 tsp kosher salt and 1/2 tsp black pepper.
  • buffalo sauce: Whisk 3/4 cup hot sauce with 1/4 cup melted butter for a classic homemade version with the same tangy heat.
  • sandwich rolls: Toasted brioche buns, hoagie rolls or thick slices of sourdough all hold the saucy turkey well.
