Before you start

Before beginning, ensure your slow cooker is clean and placed on a flat, heat-resistant surface. Dice the yellow onion into uniform pieces to ensure even softening. Have your barbecue sauce and seasoning packet ready for immediate use.

If you are using frozen short ribs, they must be fully thawed in the refrigerator for at least 24 hours before cooking to ensure food safety and even heat distribution. Organize all ingredients next to your workstation to streamline the assembly process.

Ingredients at a glance (4)
  • 4 lb bone-in beef short ribs
  • 1 large yellow onion, diced
  • 1 packet barbecue seasoning
  • 2 cups bourbon barbecue sauce

Instructions

Assembly and seasoning

  1. Prepare the slow cooker
Place the raw bone-in beef short ribs into the bottom of the slow cooker in a single layer. Scatter the diced yellow onion evenly over the top of the beef. Sprinkle the entire packet of seasoning over the meat and onions.
Look for The ribs should be arranged in an even layer to ensure consistent cooking.
Tip Pat the ribs dry with paper towels before adding them to the cooker for a cleaner sear if desired.

The ribs should be arranged neatly at the bottom with the onions distributed evenly across the surface. Ensure the seasoning packet is sprinkled thoroughly over the entire surface area of the meat to guarantee balanced flavor. At this stage, everything should look organized and ready for the liquid component. Verify that the slow cooker is plugged in and the ceramic insert is properly seated before proceeding to the next step.

Slow cooking process

  1. Add sauce and slow cook
Pour the bourbon barbecue sauce over the seasoned ribs and onions. Cover the slow cooker with its lid. Set to low and cook for 8 hours until the meat reaches an internal temperature of at least 145°F (63°C), then let the meat rest for at least 3 minutes before handling.
Look for The sauce will bubble and thicken as the beef releases its juices.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Avoid lifting the lid during the first 6 hours to maintain the internal temperature.

As the cooking progresses, the kitchen will begin to fill with the savory aroma of the barbecue sauce and onions. The ribs will gradually darken as they absorb the sauce, and the connective tissue will begin to break down. You will notice the meat pulling slightly away from the bones. Check that the sauce is bubbling gently around the edges. If the sauce looks too thin, you may leave the lid slightly cracked for the last 30 minutes.

Resting and final presentation

  1. Rest and serve
Carefully remove the short ribs from the slow cooker and transfer them to a platter. Let the meat rest for at least 5 minutes before serving to allow the juices to redistribute throughout the tissue.
Look for The meat should be dark, glistening, and pulling away easily from the bone.
Tip Skim any excess fat from the surface of the remaining sauce in the cooker before serving as a side drizzle.

Once the ribs are removed, they should appear dark, glazed, and extremely tender. The sauce remaining in the slow cooker should be reduced and thick. Allow the meat to rest on a warm platter to retain its internal heat while the juices stabilize.

Before final service, you may garnish with fresh herbs if desired, though the ribs should look glistening and flavorful on their own. The meat is now ready to be portioned and enjoyed immediately.

Common mistakes

A common mistake is overcrowding the slow cooker, which can lead to uneven cooking and excess liquid. Always ensure the ribs are in a single layer. Another error is removing the lid too frequently; this releases essential heat and steam, significantly increasing the total cooking time and potentially drying out the meat.

Finally, failing to allow the meat to rest after cooking prevents the juices from settling, which can make the beef feel less succulent when it is finally served.

How to tell it’s done

The short ribs are considered done when the meat is exceptionally tender and can be easily pulled away from the bone with a fork. The internal temperature must reach at least 145°F (63°C) for safety, followed by at least 3 minutes of resting time.

The sauce should be thickened and glossy, clinging to the meat rather than being watery. If the meat still feels firm or resistant to the fork, continue cooking for another 30 to 60 minutes, as individual slow cooker heat levels can vary significantly.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
