Before you start

Before beginning, ensure your slow cooker insert is clean and dry. Chop the red onion into uniform pieces to ensure they soften evenly. Prepare your seasoning and measure the sauce ahead of time so the assembly process remains fast and efficient once you start loading the cooker.

Ingredients at a glance (4)
  • 4 lb country-style pork ribs
  • 1 medium red onion, chopped
  • 1 packet pork seasoning blend
  • 1 cup blackberry barbecue sauce

Instructions

Assembly Phase

  1. Prepare the Slow Cooker
Place the raw country-style pork ribs into the bottom of the slow cooker insert. Ensure the ribs are distributed in an even layer to promote consistent cooking throughout the process.
Look for ribs are in a single layer
Tip Trim any excess fat from the ribs before adding them if desired for a leaner result.

The ribs should be arranged in the base of the slow cooker without being piled too high.

The onions should be distributed evenly to provide a base of flavor, and the seasoning should be sprinkled thoroughly to ensure every piece of meat is adequately coated before the sauce is added.

Cooking Phase

  1. Season and Glaze
Scatter the chopped red onion over the ribs. Sprinkle the seasoning packet evenly across the surface of the meat. Pour the blackberry barbecue sauce over the top, ensuring the ribs are well coated.
Look for ribs are covered in sauce
Tip Use a silicone spatula to help spread the sauce into the crevices between the ribs.

During the slow cooking process, the kitchen should begin to smell savory and slightly sweet as the sauce reduces.

The ribs will gradually shrink slightly as the fat renders and the meat becomes tender. You may see some condensation on the inside of the lid, which is normal and helps keep the meat moist.

Finishing Phase

  1. Slow Cook and Serve
Cover the slow cooker and cook on low for 8 hours or on high for 4 hours. Once the meat reaches an internal temperature of 145°F (63°C), turn off the heat and let the ribs rest for 5 minutes before serving.
Look for the meat is fork-tender and pulls away
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip The residual heat will keep the ribs warm while they rest.

At the end of the cooking time, the sauce should have thickened into a glossy, dark glaze that coats the ribs.

The meat should look dark and tender, and the onions should be soft and translucent. Ensure the internal temperature has reached 145°F (63°C) before turning off the slow cooker.

Common mistakes

Avoid lifting the lid frequently during the cooking process, as each time you open it, heat escapes and adds time to the total cooking duration.

Also, ensure the ribs are not overcrowded; if the slow cooker is too full, the heat will not circulate properly, which can lead to uneven cooking and tough meat.

How to tell it’s done

The ribs are done when the meat is extremely tender and pulls away easily from the bone with a fork. Using a digital meat thermometer, ensure the thickest part of the ribs reaches an internal temperature of at least 145°F (63°C) to ensure safety and optimal texture.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest

Coming up in Part 3: common questions

  • Can these ribs be cooked on high instead of low?
  • What if the sauce is too thin at the end?
  • Is it necessary to use a seasoning packet?
