Before you start

Before starting, ensure all ingredients are measured and ready. Pound the chicken breasts to an even thickness using a meat mallet. Peel and grate the garlic finely.

Prepare your three dredging stations in wide, shallow bowls to make the coating process smooth and efficient. Have a wire rack ready to drain the fried chicken.

Ingredients at a glance (13)
  • 2 chicken breasts, pounded thin
  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1 1/2 cups panko breadcrumbs
  • 3 tbsp za'atar with roasted sesame
  • 1 tsp sumac
  • 1/4 cup extra-virgin olive oil
  • 1/3 cup tahini
  • 1 tbsp lemon juice
  • 1 clove garlic, grated
  • 2 tbsp ice water
  • 1/4 cup pomegranate seeds, for serving
  • 2 tbsp fresh mint, for serving

Instructions

Dredging the chicken

  1. Prepare the chicken
Pound the chicken breasts until they have an even, thin thickness. Prepare three shallow bowls: one with flour, one with the beaten egg, and a third with the mixture of panko, za'atar, and sumac. Dredge each chicken cutlet first in the flour, shaking off excess, then dip into the egg, and finally press firmly into the panko mixture until fully coated.
Look for The chicken is evenly coated with the herb-panko mixture.
Tip Pounding the chicken to an even thickness ensures it cooks quickly and uniformly.

The chicken cutlets should be thoroughly coated in the panko and za'atar mixture.

Ensure there are no bare spots on the meat, as the coating acts as a protective barrier during the shallow-fry process. Everything should be prepped before you turn on the stove.

Frying the cutlets

  1. Fry the chicken
Heat the extra-virgin olive oil in a skillet over medium-high heat until it reaches 360°F (182°C). Carefully place the cutlets in the hot oil and shallow-fry for 3.5 minutes per side. Ensure the chicken reaches an internal temperature of 165°F (74°C) to be fully cooked. Remove the cutlets from the skillet and let them rest briefly on a wire rack or paper towel-lined plate.
Look for The crust is blistered and golden-brown.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Maintain the heat level to prevent the panko from burning before the chicken is cooked through.

The chicken should sizzle immediately when it hits the oil. The crust will be golden, crisp, and fragrant with the scent of toasted thyme and sesame. Check that the chicken is cooked through to the required internal temperature before removing it from the pan.

Finishing and garnishing

  1. Make the sauce and serve
In a small bowl, whisk the tahini with the lemon juice, grated garlic, and ice water until the mixture becomes smooth and creamy. The ice water helps emulsify the tahini into a light sauce. Drizzle the finished chicken with the garlic tahini, then scatter the fresh pomegranate seeds and mint leaves over the top before serving immediately.
Look for The sauce is creamy and pale in color.
Tip Add the ice water gradually to achieve the desired consistency.

The tahini sauce will look pale, light, and creamy.

When plated, the combination of the hot, crunchy chicken and the cool, tangy sauce should be visually appealing, with the ruby-red pomegranate seeds providing a sharp, refreshing contrast to the nutty za'atar flavors.

Common mistakes

A common mistake is overcrowding the pan, which lowers the oil temperature and leads to soggy, oily breading. Always fry in batches if necessary.

Another error is not whisking the tahini sauce enough; keep whisking until the texture is smooth and creamy. Finally, avoid using high heat, which can burn the za'atar spices before the chicken is cooked through.

How to tell it’s done

The chicken is done when the exterior is a deep, blistered golden-brown and the internal temperature reaches 165°F (74°C). The meat should be opaque throughout and juices should run clear. Ensure the crust is firm to the touch before removing from the oil.

  • Poultry: 165°F (74°C) in the thickest part
