Tips for success
To keep the chips extra crunchy, avoid letting the baked casserole sit for too long before serving.
The moisture from the beef will naturally soften the chips over time, so assembly and serving should be timed closely together to get the best texture contrast between the crisp chips and the creamy, savory beef and cheese.
If you are serving a larger group, you can easily double the recipe by using two separate baking dishes.
This ensures the chips don't get crushed under too much weight and that the heat penetrates evenly to melt the cheese across the entire surface without needing to extend the baking time significantly.
Variations
- Spicy Version: Add chopped fresh habanero or serrano peppers to the beef while cooking to increase the heat. Use a spicy taco seasoning blend and top with extra sliced jalapeños before baking for a bold, fiery flavor that pairs perfectly with the melted cheddar.
- Vegetarian Option: Substitute the ground beef with seasoned black beans and sautéed bell peppers. Ensure the beans are well-drained before adding the taco seasoning. The texture remains hearty and delicious, providing a satisfying meat-free alternative that still captures the classic walking taco essence.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Reheat individual portions in the oven or microwave until hot.
- Freezer
- Freezing is not recommended as the corn chips will lose their texture and become soggy upon thawing and reheating.
- Reheat
- Reheat in a preheated oven at 350°F (175°C) until the cheese is melted and the center is hot. Use a microwave for a faster, but less crispy, result.
If you have leftovers, allow them to cool to room temperature within 2 hours before transferring them to an airtight container. Keep the garnish separate from the casserole base if possible, as the lettuce and sour cream will not reheat well and should be added fresh when you serve the leftover portion.
You can prepare the seasoned beef filling in advance and store it in the refrigerator for up to two days. When you are ready to serve, simply heat the beef in a skillet, assemble the casserole with the chips and cheese, and proceed with the baking instructions as directed for a quick weeknight meal.
Serving ideas
Serve this walking taco bake immediately while it is hot and the cheese is still stretchy.
Use a large spatula to portion out generous servings, ensuring each plate gets a good balance of the cheesy beef mixture and the crispy corn chips. It is a casual, fun dish that is perfect for informal gatherings or family dinners.
Provide extra toppings on the side so guests can customize their portions according to their preferences.
A squeeze of lime juice or a dash of hot sauce can add a bright, acidic finish that complements the savory beef and creamy cheese, elevating the overall flavor profile of this comforting and hearty casserole.
