Tips for success
To keep the plantain cups crispy for longer, ensure they are thoroughly drained on paper towels and not stacked on top of each other while cooling.
If you are serving a large crowd, you can keep the fried cups in a low oven set to 200°F (95°C) to maintain their warmth and crispness until you are ready to fill and serve them.
If you find the plantain cups are too difficult to press, you can microwave the rounds for 30 seconds before the first fry to soften the starch slightly.
This makes them much more pliable and easier to work with, especially for beginners who are not used to handling raw plantains. Always handle them carefully as they will be hot coming out of the oil.
Variations
- Shrimp and Avocado: Substitute the jerk chicken with sautéed, diced shrimp and replace the mango salsa with a simple avocado and red onion mash for a creamy, seafood-focused variation.
- Black Bean and Corn: For a vegetarian option, fill the cups with seasoned black beans, roasted corn, and a dollop of fresh pico de gallo instead of the jerk chicken and mango.
Storage and make-ahead
- Fridge
- Store the chicken and salsa filling in the refrigerator for up to 3 days. Do not store filled cups in the fridge.
- Reheat
- Reheat the plantain cups in a 350°F (175°C) oven for 5 minutes until crispy again.
Store any leftover plantain cups in an airtight container at room temperature for up to one day, though they are best consumed immediately. The jerk chicken and salsa filling should be stored in separate airtight containers in the refrigerator.
Reheat the cups in a 350°F (175°C) oven for a few minutes to restore their crunch before filling them with the refrigerated chicken and salsa mixture.
You can fry and shape the plantain cups up to four hours before serving. Keep them in a dry place at room temperature.
The jerk chicken and mango salsa can be prepared a day in advance and kept in the refrigerator, but they should only be combined with the plantain cups right before serving to prevent the shells from absorbing moisture and losing their signature brittle texture.
Serving ideas
Serve these plantain cups as an appetizer on a large platter, garnished with extra cilantro leaves or a sprinkle of fresh lime zest. They are best enjoyed immediately after filling, as the moisture from the salsa will eventually soften the crispy plantain base if left to sit for too long.
Pair these with a refreshing tropical drink or a light cocktail to complement the spicy jerk flavors. The combination of the hot, spicy chicken and the sweet mango makes them a versatile appetizer that works well for both casual backyard barbecues and more formal dinner parties where a bold, flavorful start is desired.
