Tips for success
For the crispiest result, avoid overloading the sauce wash with too much egg; the mineral water is key to a light, airy texture.
Brush the top layer generously and consider adding a little extra melted butter on the surface before baking. If the top browns too quickly, tent with foil but remove it for the last 5 minutes to re-crisp.
When slicing, use a sharp chef's knife and cut with a gentle sawing motion to avoid crushing the layers. Serve warm, but not piping hot, so the filling sets slightly.
If you have leftovers, reheat in a 350°F (175°C) oven for 10 minutes to restore crispness. The börek is equally delicious at room temperature, making it great for picnics or lunchboxes.
Variations
- Cheese and Herb Filling: Replace the beef filling with a mixture of crumbled feta, chopped fresh dill, and a handful of grated mozzarella. Sauté the onions and pine nuts as directed, then combine with the cheeses and herbs. Proceed with the same layering and baking method.
- Spicy Lamb Version: Swap the ground beef for ground lamb and add an extra teaspoon of pul biber and a pinch of ground cumin. Cook the lamb with the onions and pine nuts until browned, then finish with parsley. The lamb's richness pairs beautifully with the flaky pastry.
- Vegetarian Mushroom Filling: Sauté 400g of sliced mushrooms with the onions and pine nuts until the mushrooms release their liquid and turn golden. Season with salt, pepper, and pul biber, then stir in the parsley. This hearty filling is just as satisfying as the meat version.
- Spiced Potato Filling: Boil and mash 3 large potatoes, then mix with sautéed onions, pine nuts, salt, pepper, pul biber, and a handful of chopped parsley. Spread the mixture over the yufka layers and bake as directed. A comforting, budget-friendly option.

Store leftover börek in an airtight container in the refrigerator for up to 3 days. To reheat, place on a baking sheet and warm in a 350°F (175°C) oven for 10–15 minutes, or until heated through and crisp. Avoid microwaving, as it will make the pastry soggy. The börek can also be served cold, though it's best when reheated.
The börek can be assembled up to 24 hours in advance and kept in the refrigerator, covered with plastic wrap.
When ready to bake, let it sit at room temperature for 20 minutes, then bake as directed, adding 5–10 minutes to the baking time if starting from cold. The sauce wash and filling can also be prepared a day ahead and stored separately.
Serving ideas
Serve the börek warm as a main dish with a crisp green salad dressed with lemon and olive oil. It also pairs well with a dollop of plain yogurt or a side of pickled vegetables. For a lighter meal, cut it into smaller squares and serve as an appetizer or part of a meze spread.
This börek is a wonderful centerpiece for a family dinner or a festive gathering. The golden, flaky top and savory filling make it a crowd-pleaser.
It can be sliced into wedges or squares, and it's delicious on its own or with a squeeze of fresh lemon. Enjoy it with a glass of Turkish tea or ayran for a truly authentic experience.

Crispy Turkish Spiced Beef Tray Borek

Ingredients
- 5 sheets Turkish yufka or phyllo dough (about 12x16 inches each)
- 400 g ground beef (about 1 lb)
- 2 diced onions
- 1/4 cup pine nuts
- 1 tsp black pepper
- 1 tsp salt
- 1 tsp pul biber (Turkish chili flakes)
- 1/4 cup chopped fresh parsley
- 2 large eggs
- 1 cup milk
- 1/2 cup mineral water (soda)
- 1/2 cup olive oil
- 1/2 cup melted butter
- 1 tbsp nigella seeds (çörek otu)
Instructions
- Heat a large skillet over medium-high heat. Add the diced onions and pine nuts, and sauté until the onions are golden and the pine nuts are fragrant, about 5 minutes. Add the ground beef, breaking it up with a spoon. Season with black pepper, salt, and pul biber. Cook until the beef is browned and cooked through, about 8 minutes. Remove from heat and stir in the chopped parsley. Set aside to cool slightly.
- In a medium bowl, whisk together the eggs, milk, mineral water, olive oil, and melted butter until well combined. The mixture should be smooth and slightly frothy. Set aside.
- Brush the bottom and sides of a large round or rectangular baking tray with some of the sauce wash. Place one sheet of yufka in the tray, allowing the edges to hang over the sides. Generously brush the sheet with the sauce wash, making sure to coat it completely. Repeat with two more sheets, brushing each one well, and let them ruffle and overlap naturally.
- Spread the cooled beef filling evenly over the yufka layers, leaving a small border at the edges. Use a spatula to distribute it gently without tearing the dough.
- Place the remaining two yufka sheets over the filling, brushing each with the sauce wash and letting them ruffle on top. Tuck the overhanging edges from the bottom layers inward, brushing with more wash to seal. Sprinkle the top with nigella seeds.
- Preheat the oven to 375°F (190°C). Bake the börek for 35 minutes, or until the top is deep golden brown and puffed. The crust should be crisp and shatter when tapped.
- Remove the börek from the oven and let it rest for 10 minutes. This allows the layers to set and makes slicing easier. Cut into squares or wedges with a sharp chef's knife, and serve warm.
