Before you start

Before starting, make sure the chicken thighs are trimmed of excess fat and patted dry. Whisk the marinade ingredients in a large bowl, then add the chicken and coat thoroughly. Cover and refrigerate for at least 4 hours, or overnight for deeper flavor.

Remove the chicken from the fridge 30 minutes before roasting to take the chill off. Preheat the oven to 400°F (200°C) and have a roasting pan ready. If using a skewer, soak it in water for 30 minutes to prevent burning.

Ingredients at a glance (14)
  • 1 1/3 lb boneless skinless chicken thighs
  • 3 tbsp Turkish yogurt
  • 1 tbsp tomato paste
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp salt
  • 2 Turkish round tombik bread pockets (or pita)
  • Shredded lettuce, for serving
  • Sliced tomatoes, for serving
  • Pickled cucumbers, for serving
  • Garlic mayo sauce, for serving

Instructions

Marinate and Roast the Chicken

  1. Marinate the Chicken
In a large bowl, whisk together the Turkish yogurt, tomato paste, olive oil, cumin, paprika, oregano, garlic powder, and salt until smooth. Add the chicken thighs and turn to coat thoroughly. Cover and refrigerate for at least 4 hours, or up to overnight, to let the marinade tenderize and flavor the meat.
Look for The marinade is thick and evenly clings to the chicken.
Tip For deeper flavor, marinate overnight. Always keep the chicken refrigerated while marinating.
  2. Stack the Chicken
Remove the chicken from the refrigerator. If using a skewer, thread the thighs tightly onto a vertical skewer, pressing them together to form a compact roast. Alternatively, stack the thighs on a baking sheet in a tall pile, tucking any thin ends inward. Let sit at room temperature for up to 30 minutes before roasting.
Look for The chicken holds its shape when stacked.
Tip A tight stack helps create those crispy outer edges while keeping the inside juicy.
  3. Roast Until Crispy
Heat the oven to 400°F (200°C). Place the stacked chicken on a roasting pan and roast for 45 minutes, or until the outer edges are charred and crispy and the internal temperature reaches 165°F (74°C). Let rest for 5 minutes before slicing.
Look for The exterior is deeply browned and crisp; the juices run clear.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Use an instant-read thermometer to check the thickest part of the stack.

The marinade should be a thick, reddish-brown paste that clings to the chicken. After roasting, the exterior is deeply charred and crisp, with some darker spots from the caramelized yogurt and tomato paste.

The internal temperature reads 165°F (74°C). Let the chicken rest before slicing to keep it juicy.

Toast Bread and Carve Meat

  1. Toast the Tombik Bread
While the chicken rests, heat a flat grill or large skillet over medium-high heat. Place the tombik bread pockets on the hot surface and toast for 1–2 minutes per side, until golden and crisp on the outside but still puffy. Keep warm in a clean kitchen towel.
Look for The bread is golden brown with light grill marks.
Tip Toasting revives the bread and adds a subtle char that complements the chicken.
  2. Carve the Chicken
Using a sharp chef's knife, slice the rested chicken into thin, juicy ribbons, cutting against the grain. Aim for paper-thin slices that include some crispy edges. Pile the shaved meat on a cutting board and keep warm.
Look for The slices are thin and tender, with crispy browned bits.
Tip A very sharp knife makes carving easier and prevents tearing the meat.

The tombik bread is golden brown with light grill marks, and the inside is warm and puffy. The chicken slices are thin, tender, and include crispy edges. The meat should be piled on a cutting board, ready to assemble. The aroma is rich with roasted garlic and spices.

Assemble and Serve

  1. Spread the Garlic Mayo
Open each tombik bread pocket carefully. Spread a generous amount of garlic mayo sauce inside the pocket, covering the interior walls. This adds moisture and flavor to every bite.
Look for The mayo coats the inside evenly.
Tip Warm the garlic mayo slightly if it's too thick to spread.
  2. Layer the Vegetables
Stuff the bread with shredded lettuce, sliced tomatoes, and pickled cucumbers. Distribute the vegetables evenly so each bite has a balance of crunch and tang.
Look for The pocket is filled but not overstuffed.
Tip Pat the vegetables dry before adding to avoid sogginess.
  3. Pile on the Döner Meat
Generously stuff the pocket with the shaved chicken, pressing it in gently to fill all the gaps. Add extra meat on top for a hearty wrap. Serve immediately while the bread is crisp and the chicken is warm.
Look for The wrap is bursting with chicken and vegetables.
Tip For extra crispness, toast the assembled wrap on the grill for 30 seconds per side.

The bread pockets are generously filled with garlic mayo, fresh vegetables, and a mountain of shaved chicken. Each wrap is bursting with filling, and the bread is crisp on the outside. Serve immediately to enjoy the contrast of warm, juicy meat and cool, crunchy vegetables.

Common mistakes

One common mistake is over-marinating the chicken, which can make the texture mushy; stick to 4–24 hours. Another is roasting the chicken in a single layer, which prevents the crispy edges—stack it tightly.

Also, don't skip the rest time after roasting; carving too soon releases juices and dries out the meat. Finally, be careful not to overstuff the bread, as it can tear and make the wrap messy.

How to tell it’s done

The chicken is done when the internal temperature reaches 165°F (74°C) in the thickest part. The exterior should be deeply browned and crispy, with charred spots. Let the chicken rest for 5 minutes before carving to allow the juices to redistribute.

The tombik bread is ready when it's golden and crisp on the outside but still soft inside. Assemble the wraps immediately while the bread is warm and the chicken is juicy.
