Tips for success
For the flakiest layers, roll the dough as thin as possible without tearing. A thin dough creates more layers when folded, resulting in a shatteringly crisp texture.
If the dough sticks to the work surface, dust lightly with flour, but avoid using too much, as it can toughen the dough.
Brushing the tops with a mixture of egg yolk and melted butter gives a beautiful shine and extra richness. For an even more golden finish, brush once halfway through baking.
If you prefer a lighter version, you can use just the egg yolk without the butter, but the butter adds a wonderful flavor and helps the pastry crisp up.
Variations
- Cheese and Herb: Replace the beef filling with a mixture of crumbled feta cheese, chopped fresh parsley, and a beaten egg. This classic version is just as flaky and makes a great vegetarian option.
- Spicy Lamb: Swap the ground beef for ground lamb and add a pinch of cayenne pepper or red pepper flakes to the filling. The lamb's richness pairs beautifully with the warm spices.
- Spinach and Potato: For a vegetable filling, sauté spinach with onions and mix with mashed potatoes. Season with salt, pepper, and a hint of nutmeg for a comforting, hearty version.
- Chicken and Mushroom: Use ground chicken and sautéed mushrooms instead of beef. Add a splash of white wine to the filling for extra depth, and finish with a sprinkle of thyme.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven for 5-7 minutes to restore crispness.
- Freezer
- Freeze unbaked börek on a baking sheet, then transfer to a freezer bag. Bake from frozen, adding 5-10 minutes to the baking time.
- Reheat
- Reheat baked börek in a 350°F oven for 5-7 minutes, or until hot and crisp. Avoid microwave to prevent sogginess.
Store leftover börek in an airtight container in the refrigerator for up to 3 days. To reheat, place them on a baking sheet in a 350°F (175°C) oven for 5-7 minutes, or until crisp and heated through. Avoid microwaving, as it will make the pastry soggy.
The börek can be assembled up to a day ahead and kept covered in the refrigerator. When ready to bake, brush with the egg yolk mixture and bake directly from the fridge, adding a few extra minutes to the baking time. The unbaked börek can also be frozen for up to a month.
Serving ideas
Serve the börek triangles warm, ideally within 15 minutes of baking, when the layers are at their crispiest.
They are delicious on their own, but a side of plain yogurt or a simple tomato-cucumber salad makes a refreshing contrast. For a heartier meal, pair with a bowl of lentil soup or a green salad.
These börek triangles are also wonderful as party appetizers — cut them in half to show off the flaky layers and the savory filling.
They can be served at room temperature, but are best enjoyed warm. For a casual dinner, serve them with a dollop of yogurt and a sprinkle of sumac or red pepper flakes.

Crispy Turkish Beef Börek Triangles

Ingredients
- 4 cups all-purpose flour
- 1 1/2 cups warm water
- 1 tsp dry yeast
- 1 tsp salt
- 250 g ground beef
- 2 onions, chopped
- 1 tbsp tomato paste
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 egg yolk, beaten
- 2 tbsp melted butter
Instructions
- In a large bowl, combine the flour and salt. Dissolve the yeast in the warm water and let stand for 5 minutes until frothy. Pour the yeast mixture into the flour and mix until a soft dough forms. Knead on a floured surface for about 8 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with plastic wrap, and let rest for 30 minutes.
- Turn the dough out onto a floured surface and divide it into 4 equal pieces. Shape each piece into a smooth round ball. Cover the balls with plastic wrap and let them rest for 10 minutes. This resting period relaxes the gluten, making the dough easier to roll.
- Heat a frying pan over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Add the chopped onions and cook until soft, about 5 minutes. Stir in the tomato paste, salt, black pepper, and paprika. Cook for another 2 minutes, then remove from heat and let cool completely.
- On a floured surface, roll one dough ball into a large rectangle, about 1/8-inch thick. Repeat with the remaining balls. Cut each rectangle into long strips, about 3 inches wide.
- Place a spoonful of the cooled beef filling at one end of each strip. Fold the dough diagonally over the filling to form a triangle. Continue folding the triangle along the strip, like folding a flag, until the strip is used up. Press the edges to seal.
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Place the börek triangles on the prepared baking sheet, leaving a little space between them.
- In a small bowl, mix the egg yolk with the melted butter. Brush the tops of the börek triangles generously with the egg yolk mixture. Bake for 20-25 minutes, until golden brown and puffed.
- Remove the börek from the oven and let cool on the baking sheet for 5 minutes. Serve warm, breaking open the flaky layers to reveal the steaming filling.
