Before you start

Before beginning, ensure all ingredients are at room temperature to allow for even baking. Prepare the sage butter broth by whisking the melted butter with warm stock, fresh or dried sage, and finely diced celery and onions.

Preheating the oven is essential; start the preheat at least 20 minutes before you plan to put the dish in the oven to ensure the temperature is consistent throughout the baking process.

Ingredients at a glance (3)
  • 1 lb sweet dinner rolls, torn into chunks
  • 2 cups sage butter broth with celery and onion, diced
  • 4 tbsp butter, sliced

Instructions

Preparation and Assembly

  1. Prepare the baking dish
Preheat the oven to 375°F (190°C). Tear the sweet dinner rolls into bite-sized chunks and distribute them evenly across the bottom of a large rectangular ceramic baking dish.
Look for Ensure the bread pieces are loosely arranged to allow the liquid to penetrate.
Tip Avoid packing the bread too tightly, as this will prevent the center from becoming properly crisp.

At the end of this phase, the baking dish should be filled with uniform pieces of sweet rolls. The bread should be spread out in a single layer or slightly overlapping, ensuring there is enough room for the broth to circulate. Check that no large clumps of bread remain, as these will not cook through properly. The dish should feel ready to receive the liquid component of the recipe.

Infusion and Moistening

  1. Add the aromatics and liquid
Pour the sage butter broth mixture, containing the diced celery and onion, over the torn sweet rolls. Ensure the liquid is distributed evenly to moisten all the bread pieces.
Look for The bread should be visibly moistened but not swimming in liquid.
Tip Use a spoon to gently press the bread down to ensure even absorption of the savory broth.

Once the sage butter broth is added, the bread should be evenly coated. You will notice the bread begins to absorb the liquid almost immediately. The celery and onion should be evenly distributed throughout the dish, visible between the bread chunks. Ensure that the liquid has reached the bottom of the dish, which you can check by gently lifting a few pieces of bread with a spoon.

Baking to Perfection

  1. Top with butter and bake
Dot the top of the stuffing with thin slices of butter. Place the dish in the preheated oven and bake until the top is golden brown and crisp, approximately 30 minutes. Let rest for 5 minutes before serving.
Look for The edges should be bubbling and the top should be crisp and golden.
Tip Cover the dish with foil for the first 15 minutes if the top browns too quickly.

Upon completion of the baking phase, the stuffing should have a vibrant, golden-brown crust. The butter slices will have melted into a rich glaze on the surface. The aroma should be distinctly savory with the fragrance of sage.

Before serving, the dish must rest for five minutes to allow the moisture to redistribute, which ensures the stuffing holds its structure when scooped onto plates.

Common mistakes

A common mistake is using too much broth, which can result in a soggy, dense stuffing rather than one that is light and crispy. Always start with the recommended amount and only add more if the bread appears completely dry.

Another frequent error is overcrowding the dish, which prevents the heat from circulating properly and leads to uneven browning of the bread pieces and undercooked aromatics in the center.

How to tell it’s done

The stuffing is done when the internal temperature is steaming hot and the top is deeply golden brown. Using a spoon, gently press into the center; it should feel firm but moist.

The edges will appear bubbly where the butter has melted and integrated with the broth. There should be no signs of excess liquid at the bottom of the dish, and the aroma should be rich with sage and caramelized onion.
