Before you start

Before beginning, ensure all ingredients are at room temperature to promote even cooking. Pat the chicken breasts dry with paper towels to help the breading adhere properly. Arrange your workspace with a station for stuffing, a separate station for breading, and a final station for frying.

Prepare a wire rack over a baking sheet to keep the fried chicken crisp after it comes out of the oil. Having everything organized beforehand prevents the breading from becoming soggy and keeps the cooking process efficient.

Ingredients at a glance (6)
  • 2 chicken breasts, butterflied
  • 4 oz fresh mozzarella logs
  • 2 tbsp garlic herb butter
  • 1 cup seasoned Italian panko
  • 1/2 cup San Marzano marinara
  • 1/2 cup grated provolone cheese

Instructions

Preparation and Breading

  1. Stuff and Bread
Butterfly each chicken breast to create a pocket. Stuff each pocket with 2 ounces of mozzarella and 1 tablespoon of garlic herb butter. Secure the edges well to prevent leaking. Coat the stuffed chicken thoroughly in the seasoned Italian panko.
Look for Ensure the pockets are tightly sealed so the cheese stays inside during frying.
Tip Use toothpicks to secure the opening if the chicken breasts are prone to opening.

The chicken should be securely butterflied and filled, with the breading coating the exterior completely. The surface should look uniform and dry, with no visible gaps in the panko coverage. This ensures that the breading forms a protective layer that keeps the juices inside the meat. If any areas look thin, add an extra layer of panko to ensure the coating is substantial enough to withstand the frying process without breaking down or absorbing too much oil.

Deep Frying

  1. Fry the Chicken
Heat oil in a deep-fryer or heavy pot to 350°F (177°C). Carefully lower the breaded chicken into the hot oil. Fry for 6 minutes until the exterior is deep golden-brown and the internal temperature reaches 165°F (74°C). Remove and drain on a wire rack.
Look for The chicken should sound crisp when tapped and look uniformly golden.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not overcrowd the fryer to maintain a consistent oil temperature.

The chicken should emerge from the oil with a deep, golden-brown crust that sounds hollow when tapped. The exterior should be firm, and the meat should be cooked through to 165°F (74°C). The oil should be clear and not smoking. The chicken should rest on a wire rack for a few minutes to allow the residual heat to distribute, which helps maintain the integrity of the breading and prevents the crust from becoming soggy before it is topped and broiled.

Broiling

  1. Top and Broil
Place the fried chicken on a baking sheet. Spoon 1/2 cup of San Marzano marinara over each piece and top with 1/2 cup of grated provolone. Broil at 500°F (260°C) for 2 minutes or until the cheese is bubbling and slightly blistered. Serve immediately.
Look for The cheese should be melted, bubbly, and show small brown spots.
Tip Watch closely under the broiler as cheese can burn very quickly at high temperatures.

The final dish should feature a vibrant red marinara sauce that is hot and slightly thickened, with the provolone cheese melted into a gooey, stretchy layer. The edges of the cheese should be slightly browned and blistered from the broiler heat.

The entire dish should be fragrant, with the aroma of toasted garlic and herbs. When sliced, the mozzarella should pull away in long, elastic strands, indicating that the filling has reached the perfect temperature for serving.

Common mistakes

A common mistake is failing to seal the edges of the chicken properly, which allows the molten cheese and butter to leak into the oil, potentially causing splattering or a messy presentation.

Another error is overcrowding the fryer, which drops the oil temperature too quickly and results in greasy, under-crisped breading. Always maintain the oil at 350°F (177°C) and fry in batches if necessary to ensure the crust develops its characteristic crunch and the chicken cooks evenly throughout the interior.

How to tell it’s done

The chicken is perfectly done when the internal temperature reaches 165°F (74°C). The crust should be a deep, uniform golden brown, and the cheese should be visibly oozing from the sides when pressed.

The provolone topping will be fully melted, bubbly, and slightly blistered. Always use a digital meat thermometer inserted into the thickest part of the chicken to verify the internal temperature before adding the marinara and cheese to ensure safety and quality.

  • Poultry: 165°F (74°C) in the thickest part
