Tips for success
To get the crispiest chicken, make sure the griddle is hot before adding the tacos. Use a cast iron press or a heavy spatula to press down gently—this ensures maximum contact and even browning.
Don't overcrowd the pan; cook in batches if needed. If the chicken sticks, wait a little longer—it will release when properly seared.
For the best Caesar dressing, use freshly squeezed lemon juice and a good-quality mayonnaise. Taste and adjust the seasonings to your preference.
If you like a stronger garlic flavor, add an extra clove. The dressing can be made ahead and stored in the refrigerator for up to 3 days. Toss the salad just before serving to keep it crisp.
Variations
- Spicy Chipotle: Add 1-2 chipotle peppers in adobo sauce to the Caesar dressing for a smoky, spicy kick. Or sprinkle the chicken with chili powder before pressing onto the tortillas.
- Greek Yogurt Swap: Replace half the mayo with plain Greek yogurt for a tangier, lighter dressing. This works well if you prefer a less rich flavor.
- Herb Infusion: Mix 1 tablespoon of chopped fresh parsley or chives into the dressing for extra freshness. You can also add a pinch of dried oregano to the chicken mixture.
- Cheese Lovers: Add a slice of provolone or mozzarella on top of the chicken during the last minute of cooking to melt. Then proceed with the salad and parmesan.
Storage and make-ahead
- Fridge
- Store leftover tacos (without salad) in an airtight container for up to 2 days. The salad can be refrigerated separately for up to 1 day.
- Freezer
- Freeze cooked tacos (without salad) in a single layer, then transfer to a freezer bag for up to 1 month. Reheat in a skillet or oven until hot and crispy.
- Reheat
- Reheat frozen tacos in a 350°F (175°C) oven for 10-12 minutes, or in a skillet over medium heat until warmed through and crispy.
Leftover tacos can be stored in an airtight container in the refrigerator for up to 2 days. Keep the salad separate to avoid sogginess. Reheat the tacos in a skillet over medium heat until warm and crispy.
You can prepare the chicken-topped tortillas up to 4 hours ahead and keep them refrigerated. The Caesar dressing can be made up to 3 days in advance. Assemble the tacos just before serving to maintain crispness.
Serving ideas
Serve these tacos immediately after assembling to enjoy the contrast of crispy tortilla, juicy chicken, and cold, crisp salad.
They're perfect for a weeknight dinner, a casual gathering, or even a fun weekend lunch. Pair them with a cold beer or a refreshing limeade.
For a complete meal, serve with a side of black beans or Mexican rice. You can also set out extra parmesan and hot sauce for guests to customize.
The tacos are best enjoyed fresh, but they're so delicious they'll disappear quickly.

Crispy Smashed Chicken Caesar Tacos

Ingredients
- 2 lb ground chicken
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 8 mini flour tortillas
- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 clove garlic, minced
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1 tsp Worcestershire sauce
- 4 cups shredded romaine lettuce
- 1/2 cup shaved parmesan
Instructions
- In a bowl, combine the ground chicken with kosher salt and black pepper. Mix gently with your hands until just combined. Divide the mixture into 8 equal portions, about 1/4 cup each. Press each portion firmly onto a mini flour tortilla, spreading the meat to the edges. The chicken should adhere to the tortilla like a patty.
- Place a large cast iron griddle or skillet over medium-high heat. Allow it to get hot for a few minutes. You can test by sprinkling a drop of water—if it sizzles and evaporates immediately, the surface is ready.
- Place the tortillas chicken-side down onto the hot griddle. Use a cast iron press or a heavy spatula to gently press each taco down. Cook for 3 minutes without moving, until the chicken is deeply caramelized and crispy at the edges. The meat should release easily from the griddle when ready.
- Carefully flip each taco using a spatula so the tortilla side is down. Cook for another 2-3 minutes, until the tortilla is golden and crunchy. The chicken should be cooked through, reaching an internal temperature of 160°F (71°C). Transfer the tacos to a plate and keep warm.
- In a small bowl, whisk together the mayonnaise, Dijon mustard, minced garlic, lemon juice, olive oil, and Worcestershire sauce until smooth and creamy. Taste and adjust seasoning with salt and pepper if desired.
- In a large bowl, combine the shredded romaine lettuce with the prepared Caesar dressing. Toss well to coat every leaf. The salad should be lightly dressed, not drenched.
- Pile the Caesar salad generously onto each crispy chicken taco. Shower with shaved parmesan cheese. Serve immediately while the tortillas are still crunchy.
