Tips for success
For a more intense garlic flavor, allow the butter and garlic mixture to sit for a few minutes before brushing it onto the bread. This allows the flavors to infuse properly. Additionally, sprinkling a little extra grated parmesan on top of the mozzarella before baking can add a nice salty, nutty finish to the crust.
If you find the bread is browning too quickly on top before the cheese has fully melted, cover the loaf loosely with a piece of aluminum foil. This helps the heat penetrate the center of the bread without burning the crust, ensuring that every bite is perfectly cooked and the cheese remains gooey and delicious.
Variations
- Spicy Sausage Version: Add a teaspoon of crushed red pepper flakes to the sausage while browning it to introduce a spicy kick that pairs beautifully with the creamy cheese and garlic butter.
- Veggie-Packed Version: Sauté finely diced bell peppers and onions along with the sausage to add a pop of color and sweetness, providing a more complex flavor profile to the stuffed bread.
Storage and make-ahead
- Fridge
- Keep leftovers in the refrigerator for up to 2 days. Cool completely before storing.
- Freezer
- Wrap the cooled, baked loaf tightly in plastic wrap and foil; freeze for up to 1 month.
- Reheat
- Reheat in a 350°F (175°C) oven until the bread is crisp and the cheese is melted again.
Store any leftovers in an airtight container to maintain the texture of the bread. While this dish is best served fresh, it can be kept in the refrigerator for up to two days.
Note that the crust will soften over time, so reheating is essential to regain the original crispy texture of the bread and the melted consistency of the cheese.
The sausage can be cooked and cooled up to 24 hours in advance and stored in the refrigerator.
The bread can also be scored and brushed with the garlic butter ahead of time, but it is best to fill and bake the bread just before serving to ensure the crust remains as crispy as possible and the cheese is perfectly molten.
Serving ideas
Serve this bread warm directly from the oven on a wooden board for a rustic presentation. It works well as a centerpiece for a casual gathering or as a hearty appetizer.
Provide napkins, as the molten cheese can be quite messy and indulgent. The bread is best enjoyed when the cheese is still soft and stretchy, straight from the oven.
Accompany this dish with a light, acidic salad or some pickled vegetables to cut through the richness of the sausage and cheese.
The contrast between the savory, heavy bread and fresh, crisp greens creates a balanced eating experience. Arrange the slices so guests can easily pull them apart, highlighting the beautiful layers of meat and cheese inside.

Crispy Sausage and Cheese Stuffed Bread

Ingredients
- 1 loaf crusty bread
- 1 lb fresh sausage, casings removed
- 8 oz shredded mozzarella cheese
- 4 tbsp unsalted butter, melted
- 2 cloves garlic, minced
Instructions
- Heat a large skillet over medium-high heat. Add the fresh sausage and cook, breaking it into small crumbles with a wooden spoon, until it is browned and reaches an internal temperature of 160°F (71°C). Drain any excess fat and set aside to cool slightly before assembling the bread.
- Using a serrated knife, score the loaf of bread in a crosshatch pattern, cutting deep enough to create pockets but not all the way through the bottom crust. Combine the melted butter and minced garlic in a small bowl. Brush this garlic butter liberally into the cuts and over the top of the bread.
- Gently pry open the cuts and fill them with the cooked sausage crumbles and generous portions of shredded mozzarella cheese. Place the stuffed loaf on a baking sheet and bake in a preheated oven at 375°F (190°C) for 15 to 20 minutes, or until the bread is golden brown and the cheese is bubbling and melted throughout.
