Before you start

Before starting, ensure all ingredients are measured and ready within arm's reach, as the cooking process moves very quickly. Have your chopped scallions ready in a small bowl and your cheese pre-shredded to prevent any delay during the assembly phase.

Preheating your pan is the most important step; if the pan is not sufficiently hot, the rice paper will not crisp properly and may instead become chewy or tough. Ensure you have a wide, thin spatula ready to assist with the folding process, as the crepe will be delicate yet firm.

Ingredients at a glance (7)
  • 1 sheet Vietnamese rice paper, 22-centimeters
  • 10 ml sesame oil
  • 1 large egg
  • 15 g chopped scallions
  • 25 g shredded mozzarella cheese
  • Sweet soy paste, for serving
  • Chili oil, for serving

Instructions

Foundation and Layering

  1. Prepare the Skillet
Place a non-stick skillet over medium-high heat. Brush the surface evenly with the sesame oil to ensure the rice paper does not stick and gains a toasted flavor.
Look for The oil should shimmer slightly but not smoke.
Tip Using a high-quality non-stick pan is crucial for this recipe.
  2. Layer the Ingredients
Place the rice paper sheet into the warm skillet. Crack the egg directly onto the center of the rice paper and scatter the chopped scallions over the top.
Look for The egg should begin to set immediately upon contact with the heat.
Tip Work quickly so the rice paper does not become too brittle.

The skillet should be evenly coated with oil and shimmering. Upon adding the rice paper, it should hiss slightly. The egg should be cracked directly into the center, and the scallions should be distributed evenly.

The rice paper will begin to curl slightly at the edges, which is a sign that the heat is penetrating the sheet effectively. Check that the rice paper is not sticking to the base of the pan before proceeding.

Cooking and Scrambling

  1. Scramble and Cook
Using a spatula, gently scramble the egg across the surface of the rice paper. Continue cooking at 356°F (180°C) until the egg reaches 160°F (71°C) to ensure it is cooked through, or leave it soft for your preferred texture, while the rice paper becomes blistered and crispy.
Look for The rice paper should turn golden brown and crackle.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Ensure the egg is fully cooked through to reach the safe temperature of 160°F (71°C) if desired.

The egg should be actively scrambling across the surface of the rice paper. You should hear a distinct sizzling sound as the moisture from the egg evaporates. The rice paper will start to bubble and turn golden brown, indicating that the starch is setting and crisping. Ensure the heat is consistent and the egg is cooked to your desired consistency before adding the cheese to the center.

Melting and Folding

  1. Add Cheese and Fold
Sprinkle the shredded mozzarella cheese over the scrambled egg mixture. Once the cheese begins to melt, fold the rice paper crepe in half using your spatula.
Look for The cheese should be gooey and bubbling slightly.
Tip Do not overstuff the crepe or it will be difficult to fold.
  2. Garnish and Serve
Remove the crispy crepe from the skillet. Drizzle with sweet soy paste and chili oil before serving immediately while the edges are still shattering-crisp.
Look for The drizzle should coat the crepe evenly.
Tip Serve immediately to maintain the best texture.

The mozzarella should be melting into the egg mixture, creating a cohesive, gooey filling. The crepe should be folded carefully in half, ensuring the edges align. The final product should be golden, crispy, and firm enough to hold its shape. The aroma of toasted rice, sesame, and melted cheese should be prominent. If the crepe is not yet crispy, give it another few seconds of direct heat.

Common mistakes

A common mistake is using a pan that is not hot enough, which prevents the rice paper from crisping and leads to a gummy texture. Another error is overloading the crepe with too many scallions or too much cheese, which adds excess moisture and prevents the rice paper from achieving its signature shatteringly crisp finish.

Finally, failing to use enough oil can cause the rice paper to stick to the pan, making it impossible to fold without tearing the delicate, crispy structure.

How to tell it’s done

The crepe is done when the rice paper has turned a deep, golden brown and feels rigid to the touch. The edges should show clear signs of blistering and should crackle when tapped with a spatula.

The egg inside can be cooked to your preference, reaching an internal temperature of 160°F (71°C) for fully set eggs. The mozzarella should be completely melted and slightly browned in spots. If the center still feels liquid, continue cooking for another thirty seconds to ensure food safety.

  • Egg dishes: 160°F (71°C) in the thickest part
